Campfire Casserole–smoked sausage, yellow potatoes, sweet corn, barbecue sauce and cheddar made in your Instant Pot or Crockpot.

Campfire Casserole (Instant Pot or Crockpot)

Campfire Casserole

This reminds me of something that you’d eat out of a dutch oven at camp. It’s simple, yet delicious. The best part about it is that you don’t have to make a fire and cook it for an hour or two only to find that the potatoes are still raw. With your Instant Pot you can be enjoying this dinner in just a few minutes 🙂

Ingredients/Substitution Ideas

  • Olive oil–or canola, vegetable
  • Beef smoked sausage–or kielbasa
  • Onion–or shallot
  • Garlic
  • Chicken broth–or water and Better than Bouillon chicken base
  • Yukon gold potatoes–or red, peeled russets
  • Black pepper
  • Kosher salt
  • Barbecue sauce–I used Sweet Baby Rays
  • Sweet white corn
  • Cheddar cheese–I like sharp

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and onion and saute for 4-5 minutes. Add in the garlic and saute for 30 seconds. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Evenly add in the potatoes. Sprinkle them with the pepper and salt. Dump in the barbecue sauce and corn. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes then move valve to venting. Remove the lid.

Stir in the cheese.

Serve and enjoy!

Notes/Tips

  • Serve with cornbread and spinach or collard greens.
  • This recipe can be gluten-free if you use gluten-free barbecue sauce.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with frozen sweet corn are cockadoodle casserole and busy wife delight.
  • For a better tasting slow cooker version brown the sausage and saute the onions before slow cooking.

Description

Smoked sausage, yellow potatoes, sweet corn, barbecue sauce and cheddar made in your Instant Pot or Crockpot.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 6 ounces beef smoked sausage, sliced
  • 1/2 cup sliced onion
  • 2 cloves of garlic, minced
  • 1/2 cup chicken broth
  • 2 medium yukon gold potatoes (about 14 ounces), cut into half inch cubes
  • 1/2 tsp pepper
  • 1/4 tsp kosher salt
  • 1/4 cup barbecue sauce
  • 1/2 cup frozen sweet white corn
  • 1/2 cup shredded cheddar cheese

Instructions

Instant Pot Instructions:

Slow Cooker Instructions:

  1. Add smoked sausage, onions, garlic, broth, potatoes, pepper, salt, bbq sauce and corn into slow cooker and stir. 
  2. Cover and cook on low for 4 hours, or until potatoes are soft.
  3. Stir in the cheese. Serve and enjoy!

    this was a very delicious recipe! my only negative comment is the portion sizes. it was not enough for 3 people. it’s a good thing I doubled the recipe so there was plenty for 3 adults!
