Description

A creamy, cheesy one-pot dinner made with sausage, Arborio rice, bacon, green onions and crunchy almonds for an easy family-friendly meal.


Ingredients

Scale
  • 16 oz ground sausage
  • 2 1/2 cups water
  • 1 cup arborio rice
  • 1 (10.5 oz) can cream of chicken soup
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbsp hot sauce
  • 1/2 cup sour cream
  • 4 green onions, sliced
  • 1/2 cup sliced almonds
  • 1/2 cup bacon crumbles
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Brown for 5 minutes. Drain off excess grease.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Then add in the cream of chicken soup, onion powder, garlic powder and hot sauce.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the sour cream, green onions, sliced almonds, bacon and cheddar.
  6. Serve and enjoy!
