Texas Slop Suey
This is such a great “clean out the pantry” kind of meal that still tastes like you planned it all along. I love how you dump everything into the slow cooker, stir and walk away. We loved the leftovers of this one with a big scoop of cottage cheese on top to add more protein and a creamy element. This meal is definitely one to keep in your regular rotation! Ingredients/Substitution Ideas
- Beef smoked sausage–or turkey smoked sausage
- Frozen sweet corn–or canned corn (drained)
- Black eyed peas–or black beans
- Kidney beans–or cannellini beans
- Pinto beans–or great northern beans
- Rotel tomatoes with green chiles–or diced tomatoes + a small can green chiles
- Black pepper–or white pepper
- Seasoned salt–or salt + a pinch of garlic powder
- Chicken broth–or water and Better than Bouillon chicken base
- Converted rice–or long grain white rice (not instant)
- Salsa–or tomato sauce
Steps
Add all ingredients into slow cooker and stir.

Cover slow cooker and cook on high for 2-3 hours or on low for 4 hours, or until rice is tender. All slow cookers cook differently so your cooking time might be less or more.

Stir and serve. Top with cheese, if desired.


Notes/Tips
- Serve this with shredded cheese, sour cream or sliced green onions on top for extra flavor. A side of cornbread or tortilla chips pairs perfectly with this dish.
- If you want more heat, use hot Rotel or a spicy salsa.
- For extra flavor, brown the sausage in a skillet before adding it to the slow cooker.
- This recipe is gluten free and dairy free.
- I used my 6 quart Ninja slow cooker. You can also make this in an 8 quart slow cooker.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. This recipe freezes well. Just cool completely and freeze in portions for up to 3 months.

- 1 1/2 cups frozen sweet corn
- 1 (15.5 oz) can black eyed peas, rinsed and drained
