Luscious Casserole–a creamy and tangy Instant Pot chicken and rice dish made with arborio rice, lemon juice, capers, and parmesan for a fun twist on chicken piccata.

Luscious Casserole
If you love chicken piccata you’ll love this mash up of chicken piccata and risotto. It is creamy and luscious and addicting! The lemon gives it a super bright pop of flavor. The Instant Pot makes it so easy. It’s a dump and go recipe so there is not a ton of work involved. Enjoy!
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Fresh lemon juice–very important to use fresh for the flavor
- Arborio rice–I buy this in the bulk section at Winco
- Garlic powder
- Boneless skinless chicken thighs
- Lemon pepper seasoning
- Dried parsley
- Cream cheese
- Capers
- Parmesan cheese
Steps
Pour broth and lemon juice into Instant Pot. Sprinkle in the rice and garlic powder. Add in the chicken on top and sprinkle the chicken with lemon pepper and parsley. Place cream cheese on top of chicken.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir. Stir in the capers and parmesan. Serve and enjoy!


Notes/Tips
- Serve with steamed or roasted broccoli, asparagus or green beans.
- This recipe is gluten free (just check your lemon pepper seasoning).
- Arborio rice is a short-grain, high starch Italian rice which creates a super creamy texture.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 2 tsp garlic powder
- 16 ounces boneless skinless chicken thighs, cut into bite size pieces
- 1 tsp lemon pepper seasoning
- 1 tsp dried parsley
- 4 ounces cream cheese
- 4 Tbsp capers
- 1/2 cup parmesan cheese
