My Boo Soup–an Instant Pot or slow cooker smoky sausage and bacon soup with potatoes, beans, and kale, brightened up with a squeeze of lime. A simple and delicious soup.

My Boo Soup

For Valentine’s Day I made this for my boo, Greg. I served it up with some rosemary bread. He loved it. Maybe your sweetheart would enjoy it too? This brothy sausage and kale soup was very simple, made with only a handful of ingredients but very satisfying. The combination of bacon crumbles and beef smoked sausage gives the broth a savory and smoky taste. The kale adds a pop of color and nutrition. The beans add a creamy texture as well as adding some fiber. And the unique addition of lime juice adds a bit of acidity and keeps the flavors from feeling too heavy.

Ingredients/Substitution Ideas

  • Thick cut bacon–or bacon crumbles
  • Olive oil–or you can use bacon grease
  • Beef smoked sausage
  • Onion
  • Garlic
  • Chicken broth–or water and Better than Bouillon chicken base
  • Red potatoes–or peeled russets, yukon golds
  • Great northern beans–or cannellini beans, navy beans
  • Kale–or spinach
  • Lime
  • Fresh cracked pepper
  • Parmesan cheese–optional but yummy

Steps

Cook bacon and place on a paper towel lined plate and set aside. I used my air fryer* to cook the bacon.

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown for 3 minutes. Add in the onion and saute for 3 more minutes. Add in the garlic and saute for 30 seconds.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the potatoes, beans and kale.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Juice the lime and stir in the juice. Add in fresh cracked pepper to taste. Crumble the bacon and stir it into the pot. 

Ladle into bowls and top each serving with a bit of parmesan cheese. 

Instant Pot Sausage Kale Potato Soup

Notes/Tips

  • Serve with french bread, cornbread or dinner rolls.
  • Lately I’ve been buying a big bag of chopped kale at then I just throw it in the freezer. It’s perfect for soups and such.
  • This recipe can also be made with a pound of ground Italian sausage instead of the smoked sausage. You just need to brown it up and drain off the excess grease.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 5 slices, thick cut bacon
  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage, halved lengthwise and then sliced
  • 1 small onion, diced
  • 5 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound red potatoes, cut into 1/2 inch cubes
  • 1 (15.5 oz) can great northern beans, rinsed and drained
  • 3 cups chopped kale (steps removed)
  • 1 lime
  • Fresh cracked pepper
  • Parmesan cheese, for topping

Instructions

Instant Pot Instructions:

  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  6. Juice the lime and stir in the juice. Add in fresh cracked pepper to taste. Crumble the bacon and stir it into the pot. 
  7. Ladle into bowls and top each serving with a bit of parmesan cheese. 

Slow Cooker Instructions:

  1. Cook bacon and place on a paper towel lined plate and set aside. I used my air fryer* to cook the bacon.
  2. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown for 3 minutes. Add in the onion and saute for 3 more minutes. Add in the garlic and saute for 30 seconds. Transfer to the slow cooker. 
  3. Add in the broth, potatoes, beans and kale.
  4. Cover and cook on low for 4 hours, or until potatoes are tender.
  5. Juice the lime and stir in the juice. Add in fresh cracked pepper to taste. Crumble the bacon and stir it into the pot. 
  6. Ladle into bowls and top each serving with a bit of parmesan cheese.

    Your Dirty Casserole sounds delicious, however, I do not own an insta pot cooker. Can I make this in the oven bakiing it?

    This was yummy. Everyone in my house liked it, spinach worked great. Just realized I forgot to add the bacon crumbles. Also didn’t really taste the like but I will make this one again

    Please include alternatives to kale in your recipes since my partner doesn’t like kale and it appears in 90% of your posted recipes.

      Tip: you can always use spinach instead of kale or just leave it out
