Kale Soup–filled with aromatic veggies, flavorful Italian sausage and creamy white beans this kale soup is hearty and comforting. Make it in your Instant Pot or slow cooker.

Instant Pot Kale Soup

Kale Soup

This soup is super flavorful and delicious. You’ll love how the Italian sausage flavors the whole pot of soup. The orange carrots and green kale bring nutrition and some pops of color. The white beans add a creamy element and are loaded in healthy, filling fiber. This is one of those soups that you’ll be slurping down and asking for more. Enjoy!

Ingredients/Substitution Ideas

  • Italian sausage–I used mild
  • Yellow onion
  • Chicken broth–or water and Better than Bouillon chicken base
  • Carrots
  • Celery
  • Garlic cloves
  • Italian seasoning
  • Black pepper
  • Kale
  • Lemon juice
  • Great northern white beans–or another type of white bean like navy beans or Cannellini beans
  • Parmesan cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and brown for 5 minutes. Drain off excess grease.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the carrots, celery, garlic, Italian seasoning, pepper, kale, lemon juice and white beans. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir. Ladle into bowls and top with some parmesan cheese. Enjoy!

Instant Pot or Slow Cooker Kale Sausage Soup

Notes/Tips

  • Serve with some crusty bread, French bread, breadsticks, cornbread or a dinner roll.
  • This recipe is gluten free and can be dairy free if you forego using parmesan cheese.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot (or halve the recipe in a 3 quart pot).
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 pound ground Italian sausage (I used mild)
  • 1 medium yellow onion, diced
  • 8 cups chicken broth
  • 2 medium carrots, peeled and sliced or diced
  • 2 ribs of celery, sliced or diced
  • 4 large garlic cloves, minced
  • 2 tsp Italian seasoning
  • 1 tsp black pepper
  • 6–8 leaves of kale, stem discarded and chopped
  • 4 tsp lemon juice
  • 2 (15 oz) cans great northern white beans, rinsed and drained
  • Parmesan cheese, for topping

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and brown for 5 minutes. Drain off excess grease.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the carrots, celery, garlic, Italian seasoning, pepper, kale, lemon juice and white beans. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the sausage and break it up. Add in the onion and brown for 5 minutes. Drain off excess grease. Transfer to slow cooker.
  2. Add in the broth, carrots, celery, garlic, Italian seasoning, pepper, kale, lemon juice and white beans. 
  3. Cover and cook on low for 4 hours or on high for 2-3 hours.
  4. Stir. Ladle into bowls and top with some parmesan cheese. Enjoy!

    In general, do you think that when a recipe says ‘Italian Sausage’ I can substitute plain British Sausage and add a little fennel, which I believe is a key constituent of Italian Sausage. I can get what is referred to as ‘Italian Style’ sausage here in Britain but I am not sure I can detect much difference. British/English Sausage usually has sage as a prominent ingredient but I have no idea what a genuine Italian sausage tastes like and wonder if it is similar to say a ‘Danish Pastry’ which just tastes like a patry and ‘Italian Sausages’ are just like sausages.

      Yes you can use whatever sausage you can find. Italian sausage is just a bit more spicy and has some seasonings like fennel, garlic, anise, oregano, basil, and red pepper flakes (for spicy versions).

    I made this and it is delicious!!💗
    Only reason it’s not a 5 star for us….the soup was a little thin and I had even added extra kale.
    I would definitely put 3 cans of Great Northerns next time and maybe a bit of extra sausage.👍

    Quick, cozy, filling, and delish. I only had fresh spinach on hand (was out of kale), so stirred that in to wilt upon opening the lid at end of cooki time. We slurped it up! Thanks!
