Mrs. Claus Casserole–an easy one pot meal with smoked sausage, potatoes, carrots, broccoli and bacon made fast and easy in the Instant Pot.

Today’s recipe is a good one for this busy time of year! Mrs. Claus is probably preoccupied with finishing up a lot of last minute Christmas to dos, so this is a good and easy one pot meal that she can make for dinner tonight. It has nutrition and lots of flavor. I found the idea for this recipe on Just a Pinch, the author said, “I found this recipe in a magazine some 20 yrs ago. It is a delicious, hearty meal for a cold winter’s night.” Plus it’s got some green and red in it to make it feel festive. Enjoy!

Ingredients/Substitution Ideas

  • Bacon
  • Beef smoked sausage–or kielbasa or andouille sausage
  • Onion–or shallot
  • Celery
  • Chicken broth–or water and Better than Bouillon
  • Carrots–or baby carrots
  • Russet potatoes–or red potatoes
  • Garlic powder–or granulated garlic
  • Kosher salt
  • Coarse black pepper–or just regular pepper
  • Frozen broccoli–or another vegetable like cauliflower

Steps

Turn Instant Pot to saute setting. When display says HOT add in the bacon and cook until crispy. Use a slotted spoon to move the bacon to a paper towel lined plate. Discard all but 1 ½ tablespoons of the bacon grease.

Add the smoked sausage into the Instant Pot and brown for about 3 minutes on each side. Add in the onions and celery and saute for 4 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off pot.

Add in the carrots and potatoes and sprinkle with the garlic powder, salt and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 

Gently stir in the broccoli and bacon.

Serve and enjoy! Some people like a dab of Dijon mustard with this meal.

Notes/Tips

  • This can be a one-pot-meal. But if you want something to serve on the side serve with some garlic bread or cornbread.
  • This recipe is gluten-free and dairy-free.
  • Feel free to use a different vegetable besides broccoli…cauliflower or green beans both work well.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

An easy one pot meal with smoked sausage, potatoes, carrots, broccoli and bacon made fast and easy in the Instant Pot.


Ingredients

Scale
  • 5 strips of bacon, chopped
  • 1 (12 oz) package beef smoked sausage, sliced
  • 1 small onion, diced
  • 1 ribs of celery, sliced
  • 1 cup chicken broth
  • 3 carrots, peeled and cut into half inch pieces
  • 3 medium Russet potatoes, peeled and cubed (about 18 ounces)
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1 tsp coarse black pepper
  • 1 (12 oz) bag frozen broccoli, cooked

Instructions

    Looks good! I would like to use green beans instead of broccoli. When should
    I put the green beans into the Instant pot?

      If I wanted to add fresh green beans, I would add them with the potatoes and carrots. If I wanted to add canned grean beans, I’d add after you release pressure.
