Description

An easy one pot meal with smoked sausage, potatoes, carrots, broccoli and bacon made fast and easy in the Instant Pot.


Ingredients

Scale
  • 5 strips of bacon, chopped
  • 1 (12 oz) package beef smoked sausage, sliced
  • 1 small onion, diced
  • 1 ribs of celery, sliced
  • 1 cup chicken broth
  • 3 carrots, peeled and cut into half inch pieces
  • 3 medium Russet potatoes, peeled and cubed (about 18 ounces)
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1 tsp coarse black pepper
  • 1 (12 oz) bag frozen broccoli, cooked

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the bacon and cook until crispy. Use a slotted spoon to move the bacon to a paper towel lined plate. Crumble the bacon. Set aside. Discard all but 1 ½ tablespoons of the bacon grease.
  2. Add the smoked sausage into the Instant Pot and brown for about 3 minutes on each side. Add in the onions and celery and saute for 4 minutes.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off pot.
  4. Add in the carrots and potatoes and sprinkle with the garlic powder, salt and pepper.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  6. Gently stir in the broccoli and bacon.
  7. Serve and enjoy! Some people like a dab of Dijon mustard with this meal.
