Description
An easy one pot meal with smoked sausage, potatoes, carrots, broccoli and bacon made fast and easy in the Instant Pot.

- 5 strips of bacon, chopped
- 1 (12 oz) package beef smoked sausage, sliced
- 1 small onion, diced
- 1 ribs of celery, sliced
- 1 cup chicken broth
- 3 carrots, peeled and cut into half inch pieces
- 3 medium Russet potatoes, peeled and cubed (about 18 ounces)
- 1 tsp garlic powder
- 3/4 tsp kosher salt
- 1 tsp coarse black pepper
- 1 (12 oz) bag frozen broccoli, cooked
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the bacon and cook until crispy. Use a slotted spoon to move the bacon to a paper towel lined plate. Crumble the bacon. Set aside. Discard all but 1 ½ tablespoons of the bacon grease.
- Add the smoked sausage into the Instant Pot and brown for about 3 minutes on each side. Add in the onions and celery and saute for 4 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off pot.
- Add in the carrots and potatoes and sprinkle with the garlic powder, salt and pepper.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Gently stir in the broccoli and bacon.
- Serve and enjoy! Some people like a dab of Dijon mustard with this meal.
