Louisiana Casserole–andouille sausage with rice, cajun seasoning, peppers, onions, celery, fire roasted tomatoes and cheese made in the Instant Pot.
Louisiana Casserole
This is a jambalaya-esque recipe with lots of flavor and minimal time and effort are required. The sausage and cajun seasoning flavors everything through and through. This recipe makes enough to feed 6-8 people but you can easily cut the recipe in half or freeze leftovers for another day if you have a smaller number of people to serve.
Ingredients/Substitution Ideas
- Butter
- Andouille sausage–or beef smoked sausage
- Onion–yellow, white
- Celery
- Green bell pepper–or red, orange, yellow
- Chicken broth–or water with Better than Bouillon chicken base
- Brown rice–or white rice (see note)
- Garlic powder–or granulated garlic
- Cajun seasoning–I used Smith’s brand cajun seasoning and it has salt in it
- Fire roasted tomatoes–I used Hunts brand
- Sharp cheddar cheese–or pepper jack, monterey jack
- Green onions–or scallions
Steps
Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the sausage and brown for 3 minutes. Stir in the onion and celery and saute for 2 minutes.
Add in the green pepper and saute for 1 more minute.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the rice.
Add in the garlic powder, cajun seasoning and tomatoes.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Stir well. Stir in the cheese and green onions.
Serve and enjoy!
Notes/Tips
- Serve with collard greens, okra, cornbread, pickled vegetables or coleslaw.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- This recipe is gluten-free. Make this recipe dairy-free by leaving out the cheese.
- Try adding in some boneless skinless chicken thighs to make this even more meaty. Or you can add in cooked shrimp when you stir in the cheese and green onions.

- I made this with brown rice but you can easily make this with any other type of rice. For white rices (long grain, converted, basmati and jasmine) use a 5 minute pressure cooking time with a 5-10 minute pressure release.

- 1 (16 oz) package Andouille sausage, sliced into quarter inch rounds
- 1 cup diced onion
- 3 ribs of celery, sliced
