Description

Andouille sausage with rice, cajun seasoning, peppers, onions, celery, fire roasted tomatoes and cheese made in the Instant Pot.


Ingredients

  • 2 Tbsp butter
  • 1 (16 oz) package Andouille sausage, sliced into quarter inch rounds
  • 1 cup diced onion
  • 3 ribs of celery, sliced
  • 1 green bell pepper, cored and diced
  • 2 1/4 cups chicken broth
  • 2 cups brown rice
  • 1 tsp garlic powder
  • 1 1/2 tsp cajun seasoning
  • 1 (14.5 oz) can fire roasted tomatoes
  • 1/2 cup shredded sharp cheddar cheese
  • 2 green onions, diced

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the sausage and brown for 3 minutes. Stir in the onion and celery and saute for 2 minutes then add in the green pepper and saute for 1 more minute. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Add in the garlic powder, cajun seasoning and tomatoes. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir well. Stir in the cheese and green onions. Serve and enjoy!

Notes

You can also make this with white rice. Use a 5 minute pressure cooking time with a 5-10 minute natural pressure release instead.
