Description
Andouille sausage with rice, cajun seasoning, peppers, onions, celery, fire roasted tomatoes and cheese made in the Instant Pot.

- 2 Tbsp butter
- 1 (16 oz) package Andouille sausage, sliced into quarter inch rounds
- 1 cup diced onion
- 3 ribs of celery, sliced
- 1 green bell pepper, cored and diced
- 2 1/4 cups chicken broth
- 2 cups brown rice
- 1 tsp garlic powder
- 1 1/2 tsp cajun seasoning
- 1 (14.5 oz) can fire roasted tomatoes
- 1/2 cup shredded sharp cheddar cheese
- 2 green onions, diced
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the sausage and brown for 3 minutes. Stir in the onion and celery and saute for 2 minutes then add in the green pepper and saute for 1 more minute.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Add in the garlic powder, cajun seasoning and tomatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir well. Stir in the cheese and green onions. Serve and enjoy!
Notes
You can also make this with white rice. Use a 5 minute pressure cooking time with a 5-10 minute natural pressure release instead.
