Iowa Casserole (Instant Pot Recipe)

Iowa Casserole

If you’re looking for an easy, hearty meal that you can put together quickly try Iowa Casserole. It’s my take on this Iowa Caucus Casserole. I used my Instant Pot to cook it up and I also used what I had on hand and eliminated the use of the cream of chicken soup. Iowa is famous for its corn and so this recipe uses sweet white corn for tiny pops of sweet flavor. The original recipe has tater tots on top (which would be great) but I opted to use Fritos corn chips which were delicious in their own right. My husband scarfed down two servings for lunch and I do have to agree with him it was quite delicious.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion
  • Kosher salt
  • Black pepper
  • Onion powder
  • Garlic powder
  • Poultry seasoning
  • Smoked paprika
  • Beef or chicken broth
  • Mushrooms
  • Diced green chiles–I used mild. Or 1 green bell pepper, diced.
  • Frozen sweet white corn
  • Cream cheese
  • Cheddar cheese–or colby jack
  • Fritos

Steps

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown for about 5 minutes. If there is excess grease drain it off.

Stir in the salt, pepper, onion powder, garlic powder, poultry seasoning and paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. 

Add in the mushrooms, green chiles, corn and cream cheese. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.

Stir until cream cheese is incorporated. Stir in the cheese. Top with Fritos. Serve and enjoy!

Notes/Tips

  • Serve with a side of fresh green beans.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. Remove Fritos before storing as they will get soggy.
  • Other recipes you can make with Fritos are Instant Pot Frito Chicken Casserole and Instant Pot Frito Pie Chili.
  • You can also top this casserole with crispy cooked tater tots or French’s fried onions.

Description

An easy Instant Pot hamburger casserole with green chiles, sweet corn, cheddar cheese and Fritos.  


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp poultry seasoning
  • 1/8 tsp smoked paprika
  • 1/2 cup beef or chicken broth
  • 4 ounces chopped mushrooms
  • 1 (4 ounce) can diced green chiles
  • 1 1/2 cups frozen sweet white corn
  • 2 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 2 cups Fritos

Instructions

    can this recipe be adapted for the slow cooker?
