Description
An easy Instant Pot hamburger casserole with green chiles, sweet corn, cheddar cheese and Fritos.

- 1 pound lean ground beef
- 1 cup diced onion
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp poultry seasoning
- 1/8 tsp smoked paprika
- 1/2 cup beef or chicken broth
- 4 ounces chopped mushrooms
- 1 (4 ounce) can diced green chiles
- 1 1/2 cups frozen sweet white corn
- 2 ounces cream cheese
- 1 cup shredded cheddar cheese
- 2 cups Fritos
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown for about 5 minutes. If there is excess grease drain it off.
- Stir in the salt, pepper, onion powder, garlic powder, poultry seasoning and paprika.
- Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Add in the mushrooms, green chiles, corn and cream cheese. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.
- Stir until cream cheese is incorporated. Stir in the cheese. Top with Fritos. Serve and enjoy!
