Iowa Casserole

An easy Instant Pot hamburger casserole with green chiles, sweet corn, cheddar cheese and Fritos.  


  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp poultry seasoning
  • 1/8 tsp smoked paprika
  • 1/2 cup beef or chicken broth
  • 4 ounces chopped mushrooms
  • 1 (4 ounce) can diced green chiles
  • 1 1/2 cups frozen sweet white corn
  • 2 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 2 cups Fritos


  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown for about 5 minutes. If there is excess grease drain it off.
  2. Stir in the salt, pepper, onion powder, garlic powder, poultry seasoning and paprika.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  4. Add in the mushrooms, green chiles, corn and cream cheese. Don’t stir.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.
  6. Stir until cream cheese is incorporated. Stir in the cheese. Top with Fritos. Serve and enjoy!
