Michigan Casserole–beans and smoked sausage in a sweet and savory sauce made in the Instant Pot, on the stove or in a slow cooker.

Michigan Casserole
This recipe is adapted from Michigan Beans and Sausage on All Recipes. The author states, “I got this recipe from a church cookbook years ago. Bean casseroles are a big hit at potlucks and picnics.” I changed up the recipe a bit to make it less sweet…the original recipe had brown sugar, white sugar and molasses in it. I’m not a huge fan of sweet beans so I chose to just add in a couple tablespoons of brown sugar. This recipe can be made in your Instant Pot (using the saute setting), on the stove top or in your Crockpot. It’s up to you. I love taking my Crockpot or Instant Pot to potlucks since they are fairly easy to travel with and you can plug them in and keep your food warm.
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Onion–yellow, white
- Beef smoked sausage–or kielbasa, hot dogs
- Great Northern beans–or navy beans
- Tomato sauce
- Ketchup–Heinz
- Apple cider vinegar–or red wine vinegar
- Brown sugar–or molasses
- Spicy brown mustard–or yellow mustard
Steps
Turn Instant Pot to saute setting (“more”). When display says HOT add in the oil and swirl around. Add in the onion and saute for 3 minutes.

Add in the sausage and fry with the onion for about 3 more minutes. Turn off Instant Pot.

Stir in the beans, tomato sauce, ketchup, vinegar, sugar, mustard and salt and pepper to taste. Let simmer on the saute (“less”) setting for 10 minutes.

Serve and enjoy.

Notes/Tips
- Serve with cornbread, collard greens or coleslaw.
- This recipe is gluten-free and dairy-free.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 Tbsp olive oil
- 1 cup minced onion
- 1 (12 oz) package beef smoked sausage, sliced
- 2 (15 oz) cans Great Northern beans, rinsed and drained
- 1 (8 oz) can tomato sauce
- 1/4 cup ketchup
- 2 tsp apple cider vinegar
- 2 Tbsp brown sugar
- 2 Tbsp spicy brown mustard
- Salt and pepper
Instructions

Stove Instructions:
- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the onion and saute for 3 minutes. Add in the sausage and fry with the onion for about 3 more minutes.
- Turn heat to low. Stir in the beans, tomato sauce, ketchup, vinegar, sugar, mustard and salt and pepper to taste. Cover with a lid and let simmer for 10 minutes.
- Serve and enjoy.
Crockpot Instructions:
- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the onion and saute for 3 minutes. Add in the sausage and fry with the onion for about 3 more minutes. Transfer to the slow cooker.
- Stir beans, tomato sauce, ketchup, vinegar, sugar, mustard and salt and pepper to taste into the slow cooker. Cover and cook on low for 2-3 hour.
- Serve and enjoy.

This is just a fancy way of making “pork and beans”
nasty. sorry, but these combinations of apple cider and mustard is nasty. I followed the recipe,. my husband got a cereal bowl full, he loves navy beans and franks. He ate it but didn’t want it again. I ate 2 spoons of it. couldn’t eat anymore. it looks just like the photo.
I do not recommend. I dumped it. what a waste of time, money and food! NASTY.
This just went to the top of the list. My Hubster truly loves beans, and we will probably add this to our “camping menu”. Yum. Be back with stars. p.s. We’re not fond of a lot of sweetness in our beans either!
