Instant Pot Mennonite Casserole–smoked sausage with cabbage, potatoes, noodles, green beans and tomato sauce. A random assortment of ingredients that taste so good together!

Instant Pot Mennonite Casserole
I took two different Mennonite casserole recipes and combined them into one to make this recipe. I was super happy with how it turned out. Putting the ingredients into the pot I wasn’t entirely sure how it would taste. It seemed like a random assortment of ingredients but they all came together and my family ate almost the entire pot. I kept getting one more scoop, one more scoop. The smoked sausage flavors everything nicely. The cabbage shrinks down so much you won’t even know it’s there. The tomato sauce adds a bit of acidity. This is a good “clean out the pantry/fridge” recipe. But it’s also worth making even if you have to pick up the ingredients at the grocery store.
Ingredients/Substitution Ideas
- Olive oil–or another type of oil, like canola oil
- Smoked sausage–I used turkey smoked sausage. You can also use kielbasa, andouille, etc.
- Diced onions–fresh or frozen
- Beef broth–or water and Better than Bouillon
- Egg noodles–or elbow macaroni (increase cooking time to 3 minutes)
- Cabbage–I used half of a small head of cabbage
- Potatoes–I used Russet potatoes. Yellow or reds can also be used.
- Garlic powder
- Kosher salt
- Black pepper
- Tomato sauce
- Canned green beans–you can also use frozen or fresh green beans
- Shredded cheddar cheese–optional, but yummy. Use another type of cheese like colby, pepper jack, etc.
Steps
- Brown sausage and sauté onions: Turn Instant Pot to sauté setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown on each side just until they start to get a little color. This adds a lot of flavor and appeal. Add in the onions and sauté until softened and translucent.
- Deglaze the pot: Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Layer in the ingredients: Add in the egg noodles. Dump cabbage and potatoes on top of noodles. Sprinkle garlic powder, kosher salt and pepper on top of potatoes. Dump in the tomato sauce and green beans. Don’t stir. This will help prevent the burn error message.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Serve: Stir well. If desired, stir in cheese. Serve and enjoy!
Notes/Tips
- This was an all-in-one pot meal for us! But if you’d like you can serve it alongside some garlic bread and applesauce.
- I used my 6 quart Instant Pot*. You can also make this in a 8 quart pot. Halve the recipe in the 3 quart pot.
- This recipe can be dairy free if you leave out the cheese.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients
- 1 Tbsp olive oil
- 1 (12 oz) package smoked sausage, sliced into quarter inch rounds
- 1 cup diced onions
- 1 cup beef broth
- 4 ounces egg noodles
- 3 cups chopped cabbage
- 2 medium (11 ounces) potatoes, peeled and cut into small cubes (like the size for potato salad)
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 (8 oz ) cans tomato sauce
- 1 (14.5 oz) can green beans, drained
- 1 cup shredded cheddar cheese (optional)

I made this for dinner tonight..(8/24/22) it was good but I think it would be better without the cabbage. I think the cabbage over powered the flavor. I used an Amish style noodle and small yellow potatoes. I eat 2 helpings. So I guess it wasn’t too bad…lol. thanks for all the good recipes.

I usually like the cabbage…I do in this but I just think it added a different taste….but guess what? I’m still
