Instant Pot Doritos Chicken Casserole

I knew that I would love this dinner because I had everything at home already. And I’m a big fan of anything with chicken, taco seasoning, beans and corn in it! Plus DORITOS!! Hello! Yes to Doritos! It really is an easy weeknight meal that you can prepare quickly in the Instant Pot or slow cooker.

What you’ll need to make Instant Pot Doritos Chicken Casserole

This is a pantry friendly, weeknight dinner that comes together quickly. You’re likely to have most of the ingredients at you home already! You’ll need…

  • Chicken breasts or thighs (use the same cooking time)
  • Broth or Better than Bouillon
  • Taco seasoning
  • Black or pinto beans
  • Corn (canned or frozen)
  • Nacho Cheese Doritos (you can also use Cool Ranch Doritos or Fritos)
  • Colby Jack cheese (you can also use cheddar, pepper jack, Monterey jack)
  • Rotel (Ro-Tel is the brand name of a line of canned tomatoes and green chili. There are different varieties of Ro-Tel in varying degrees of hotness and spiciness. I usually buy mild because my son doesn’t like spicy foods)
  • Green chiles (I buy mild hatch green chiles)
  • Sour cream (you can also use plain yogurt in the place of sour cream)
  • Cream of chicken soup (this is an optional ingredient, I didn’t use it but if you’re looking for a bump in creaminess and more of a casserole type of taste add this in)

How to make Instant Pot Doritos Chicken Casserole

You can make this Doritos Chicken Casserole in the Instant Pot or a slow cooker. Both are great!

For the Instant Pot:

  • Add chicken and broth into Instant Pot. Sprinkle the chicken with taco seasoning. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes (visit here for more exact times depending on size of chicken breast). When time is up move let pot sit for 10 minutes and then move valve to venting.
  • Place chicken on a cutting board and sliced across the grain into pieces or shred the chicken. The placement of your knife to this grain will determine the length of the muscle fibers in an individual slice of meat, which in turn will have a profound effect on how tender or tough that meat is.

  • Dump the broth out of the Instant Pot. Add chicken into Instant Pot. Stir in the beans, corn, Rotel, green chiles, sour cream and cheese. 
  • Pour the mixture into 9×13 inch baking dish. Bake for 20 minutes at 350° F. Then add crushed Doritos to the top and bake for 5 more minutes. (Alternately you can keep the mixture in your Instant Pot and use the air fryer lid to “bake” the casserole for 10 minutes at 350° F and then another 3 minutes with the Doritos on top.) 

For the slow cooker:

The slow cooker version has less steps and is easier. However it does take longer overall time because it has to slow cook for 4 hours.

  • Add chicken, taco seasoning, beans, corn, Rotel and green chiles (and cream of chicken soup, if using) into slow cooker.
  • Cover and cook on low for 4-6 hours. Shred the chicken. Stir in the sour cream and cheese.
  • Scoop onto plates and top each portion with some crunched up Doritos.

What should I serve with Doritos Casserole?

This is pretty close to an all in one pot meal but if you’re looking to add a vegetable I would suggest a tossed green salad with ranch dressing. For dessert try making Instant Pot Cracker Barrel Cinnamon Apples!

How long to cook chicken breasts in the Instant Pot

If you’re using thin chicken breasts or fat chicken breasts or chicken tenders it will affect the pressure cooking time differently. I made this video to explain how to decide how long to cook boneless skinless chicken breasts in the Instant Pot.

Description

Tender bites of chicken with black beans, corn, cheese, sour cream and Nacho Cheese Doritos. 


Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1/2 cup chicken broth
  • 2 Tbsp taco seasoning
  • 1 (14.5 oz) can black or pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can Rotel
  • 1 (4 oz) can green chiles
  • 1 cup sour cream
  • 1 cup shredded colby jack cheese
  • 2 cups crushed Nacho Cheese Doritos

Instructions

Notes

For a more creamy casserole stir in a can of cream of chicken soup.

For a more cheesy casserole bake the casserole with an extra cup of grated cheese on top of the chips.

If you don’t like spicy foods then use mild Rotel and mild green chiles
