Instant Pot Captain Rodney’s Dip

Tis the season for dips! Give me all the chips, crackers, pretzels and veggies and give me all the dips! This dip is a pepper jelly dip. It’s spicy, it’s sweet and it’s creamy. It’s not your typical dip! This dip is super fast and easy. You can make it in your Instant Pot or Crockpot.

If you’re not familiar with pepper jelly it is often made with bell peppers, jalapeño peppers, habaneros. It also often includes sugar and vinegar. Pepper jelly can be mild or red hot so read the label so you know what to expect and what to buy according to your tastes. I only put a quarter cup of pepper jelly into my dip but if you love it you can up the amount to a half cup.

Ingredients/Substitution Ideas

  • Mayonnaise
  • Cream cheese
  • Bacon crumbles
  • Captain Rodney’s Boucan Pepper Glaze or pepper jelly (or more to your taste)
  • Cheddar
  • Salt and pepper to taste

Steps

  1. Add ingredients to a pot-in-pot dish: Add mayo, cream cheese, bacon and pepper jelly to a pot-in-pot dish. Cover the dish with a lid or foil.
  2. Prepare Instant Pot: Pour 1 ½ cups water into bottom of Instant Pot. Place the pot-in-pot dish on top of a sling/trivet and lower it into the bottom of the pot. 
  3. Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes. When time is up move valve to venting. Remove the pot-in-pot dish.
  4. Stir contents well. Stir the cheddar into the dip. 
  5. Serve: Salt and pepper to taste. Serve with crackers. 

Notes/Tips

  • I used one of these stackable pans with a lid* for my pot-in-pot dish.
  • I used my OXO Sling*.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Description

A pepper jelly dip with cream cheese, bacon and cheddar.


Ingredients

Scale
  • 1/2 cup mayonnaise
  • 8 ounces cream cheese
  • 1/2 cup bacon crumbles
  • 1/4 cup Captain Rodney’s Boucan Pepper Glaze or pepper jelly (or more to your taste)
  • 8 ounces shredded cheddar (2 cups)
  • Salt and pepper to taste

Instructions

Instant Pot Instructions:

  1. Add mayo, cream cheese, bacon and pepper jelly to a pot-in-pot dish. Cover the dish with a lid or foil.

Slow Cooker Instructions:

  1. Add mayo, cream cheese, bacon and pepper jelly into a slow cooker.
  2. Cover and cook on high for 90 minutes.
  3. Stir contents well. Stir the cheddar into the dip. 
  4. Salt and pepper to taste. Serve with crackers.

      Well since it’s pot in pot it’s not direct heat. Plus it’s processed dairy so it doesn’t curdle like fresh milk would.

    This sounds delicious. I have a friend who sells her homemade hot pepper jelly at our Farmers Market. I want to try this recipe using it. I have a question though. Why would it take 15 minutes on high pressure?

      Because it is pot-in-pot so it takes longer to heat up because the food isn’t directly in the bottom of the pot
