I’m Happy Now Chicken–tender cubes of seasoned chicken tossed in greek yogurt for a creamy, flavorful and healthy dinner. An instant pot or slow cooker recipe.

I’m Happy Now Chicken

It’s been about 2 weeks since I dropped Reagan off at college. I’ve been kind of down with my daughter gone but when I ate this dinner I was like “ok I’m happy now” 😂. Sometimes you just need some good food to cheer you up in life.

This chicken has greek seasonings and then it’s coated in a creamy yogurt sauce. I loved eating this chicken with some toasted pitas and my favorite cucumber salad (I was given fresh garden cucumbers and tomatoes which elevated the experience). It was a fresh meal that was super easy to make. I think it will make you happy too.

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–I find thighs work the best for this recipe. Chicken tenderloins are also an option.
  • Lemon juice–fresh is best
  • Chicken broth–or water and Better than Bouillon chicken base
  • Garlic cloves–fresh is best. I like this garlic press*.
  • Dried dill–or fresh dill (add to taste after pressure cook time is over)
  • Paprika
  • Allspice
  • Cardamom
  • Kosher salt
  • Pepper
  • Olive oil
  • Greek yogurt–you can make your own

Steps

Cut chicken into cubes and add to the Instant Pot.

Add in the lemon juice, broth, garlic, dill, paprika, allspice, cardamom, salt, pepper and olive oil. Stir to coat the chicken in seasonings. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Use a slotted spoon to move the chicken cubes to a bowl. Stir the yogurt in with the chicken. Serve and enjoy!

Notes/Tips

  • Serve with pitas and cucumber tomato salad. You can also serve this chicken over rice or salad with feta cheese.
  • This chicken is low carb and gluten-free.
  • I have tried this chicken with thighs and with breasts. I definitely preferred the thighs. They were more moist and tender. You can use breasts or chicken tenderloins if you’d like. Use the same pressure cooking time.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Description

Tender cubes of seasoned chicken tossed in greek yogurt for a creamy, flavorful and healthy dinner. 


Ingredients

  • 1 1/4 pounds boneless skinless chicken thighs
  • 2 Tbsp lemon juice
  • 1/2 cup chicken broth
  • 5 garlic cloves, minced
  • 2 tsp dried dill
  • 1/4 tsp paprika
  • 1/4 tsp allspice
  • 1/8 tsp cardamom
  • 1/2 tsp kosher salt
  • 1/2 tsp pepper
  • 1 Tbsp olive oil
  • 1/3 cup plain greek yogurt

Instructions

Instant Pot Instructions:

  1. Cut chicken into cubes and add to the Instant Pot. Add in the lemon juice, broth, garlic, dill, paprika, allspice, cardamom, salt, pepper and olive oil. Stir to coat the chicken in seasonings.

Slow Cooker Instructions:

  1. Cut chicken into cubes and add to the slow cooker. Add in the lemon juice, broth, garlic, dill, paprika, allspice, cardamom, salt, pepper and olive oil. Stir to coat the chicken in seasonings. 
  2. Cover and cook on low for 2 hours.
  3. Use a slotted spoon to move the chicken cubes to a bowl. Stir the yogurt in with the chicken. Serve and enjoy!

Notes

I like to serve this chicken with tomato-cucumber salad and sliced pita. Here is how I make the salad: in a bowl stir together 1 medium cucumber, seeded and diced; 1 1/2 cups diced tomatoes; 1/2 tsp kosher salt; 1/2 tsp black pepper; 1 Tbsp olive oil; 1 Tbsp red wine vinegar.

    Flavorful. Easy. Quick. Chicken was tender. Sauce was watery. I didn’t
    have allspice so subbed Chinese 5 star spice. Also used fresh dill, added with other spices. And adjusted sauce with more salt and lemon juice at the end. Served with broccoli and fried potatoes. Will make again.

    If using fresh dill, should I still add it to the pot with seasonings or stir it in after cook time?
