Loaded Million Dollar Casserole–potatoes with a creamy sour cream sauce topped with bacon, ham and cheese. This will become a family favorite!

Loaded Million Dollar Casserole
This is one of my favorite casseroles! The combination of potatoes, cream cheese, sour cream, cheese, bacon and ham is super tasty. My family all loved this dish and keep saying, “you should make that again!” And I definitely will. This is a winning dinner!
Ingredients you’ll need…
- 2 pounds Yukon gold potatoes–you can also use Russet potatoes
- 3 Tbsp melted butter
- 1 1/2 tsp seasoned salt–I used Lawry’s brand
- 4 ounces cream cheese, softened–I used full fat but you can also use Neufchâtel cheese
- 1/2 cup sour cream–I used full fat but you can also use reduced fat
- 1/2 cup cottage cheese–I used full fat but you can also use reduced fat. You can use ricotta in the place of cottage cheese
- 1 cup cubed ham–you can also use smoked sausage
- 1/2 cup bacon crumbles–I buy the bacon crumbles bag from Costco. You can also fry up some bacon and use that instead
- 1 cup shredded cheddar cheese–or another type of cheese like colby jack
- 3 green onions, sliced–for color and flavor
Instructions
- Prepare potatoes: Wash the potatoes. Peel, if desired (I kept peels on) and cut into cubes (about half inch cubes). Place the cubed potatoes in a steamer basket. I used my Avokado steamer basket.*
- Pressure cook: Pour 1 ½ cups water into Instant Pot. Lower the steamer basket into the Instant Pot. Cover and lock the lid into place. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.
- Heat oven to 425° F.
- Add potatoes to a baking dish: Dump the potatoes into a 9×13 inch baking dish. Toss the potatoes with the melted butter and the seasoned salt.
- Make dairy mixture: In a medium bowl mix together the cream cheese, sour cream and cottage cheese. Drop dollops of the mixture evenly over the potatoes.
- Evenly distribute the ham cubes, bacon and cheese over the top.
- Bake for 13 minutes.
- Top with green onions and serve.
Notes/Tips
- Can I make this without an Instant Pot? Yes you can! The only part of this recipe that I used my Instant Pot for was the steaming of the potatoes. You can do that on the stovetop. Just boil the potatoes until they are fork tender, drain and then go on with the recipe (steps 3-8).
- Can I make this without an oven and use an air fryer lid instead? Yes you can! After step 2 you can dump out the water in the bottom of the Instant Pot and dry out the pot. Then do steps 4-6 in the Instant Pot liner instead of a 9×13 inch pan. Use your air fryer lid at 350° F for about 6-8 minutes.
- Can I double this recipe? Yes you can! Double all ingredients. Use 2 9×13 inch pans instead of one. Keep the same cooking times.
- Can I halve this recipe? Yes you can! Keep the same amount of water underneath the steamer basket. Halve all other ingredients. Keep the same cooking time. Bake in a 8×8 inch baking dish instead of a 9×13 inch baking dish.
- I don’t like cottage cheese. What else can I use? You can use ricotta in place of cottage cheese. Or you can use extra sour cream and cream cheese (about 3/4 cup sour cream and 6 ounces of cream cheese).
- This recipe is gluten-free!
- To make this recipe low carb use cauliflower florets instead of cubes of potatoes. Only pressure cook the cauliflower for a zero minute pressure cooking time and quick release as they will cook quite quickly!
- Store leftovers in an airtight container* in the refrigerator for up to 5 days. This does just okay in the freezer so it’s best to eat fresh or out of the refrigerator.

- I used my 6 quart Instant Pot Duo 60 7 in 1*. You can also make this in the 8 quart Instant Pot.

The blend of textures between the soft potatoes, the crunchy bacon, the chewy ham, and the creamy cheeses satisfies all my needs. Hubby said he “hurt himself” because he couldn’t stop eating.

We really enjoyed this recipe. However we made some cool changes that i thought made it better! I think you need to increase the butter content or sour cream so it gets to be a little bit more fluid. It was a little too dry for my family. Next time, I would cover the 9 x 13 pan with foil until the end. For spices I added some Cajun spice to it, which really tasted nice and didn’t overpower the dish. Then some Thyme. We didn’t have ham so i used smoked sausage. NEXT time I’m using bulk Italian sausage for the flavor! By the way, this would make a nice side dish next to scrambled eggs

For an easy crockpot version try this:
Dump a bag of frozen potato cubes (2 pounds) into a 6 quart slow cooker. Toss the potatoes with the melted butter and the seasoned salt.
In a medium bowl mix together the cream cheese, sour cream and cottage cheese. Drop dollops of the mixture evenly over the potatoes.
Evenly distribute the ham cubes, bacon and cheese over the top.
Cover and cook on high for 2-3 hours.
Top with green onions and serve.
