Idaho Homestyle Casserole–tender Instant Pot steamed potatoes get folded into a creamy, homemade cheese sauce loaded with bacon for the ultimate comfort side dish.

Idaho Homestyle Casserole
Listen, if you’ve been buying those boxed potato mixes, you need to stop right now and make this instead. This is literally 100 times better than anything that comes out of a box, and it’s honestly just as easy with your Instant Pot. I made this for my family and it was inhaled so fast I barely got seconds. The bacon takes it over the top. Try this for a side dish or add in some rotisserie chicken to make it a meal.
Ingredients/Substitution Ideas
- Russet potatoes–or red potatoes
- Butter
- Onion pulp–use a fine grater* to grate the onion until it becomes a wet, pulpy mixture. It includes the juice.
- Flour
- Milk–or evaporated milk, cream, half and half
- Kosher salt
- Black pepper
- Garlic powder
- Crushed rosemary
- Smoked paprika
- Bacon crumbles–I cooked bacon in my air fryer and crumbled it
- Colby Monterey Jack Blend–or cheddar
Steps
Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket (try not to stack potatoes directly on top of each other, rather scatter them into the basket).

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid. Remove steamer basket and discard water.

Turn Instant Pot to the sauté setting. When display says HOT add in butter and let it melt. Add in the onion pulp and stir for 30 seconds. Sprinkle in the flour and whisk into the butter.

Pour in the milk, a little at a time, and whisk it in until smooth and thickened. Stir in the salt, pepper, garlic powder, rosemary and paprika.

Turn off Instant Pot. Fold in the potatoes, bacon and cheese.


Serve and enjoy!

Notes/Tips
- Serve with roasted chicken, ham, pork chops, or steak.
- Warm your milk before adding it to prevent lumps in the sauce.
- Whisk constantly when adding milk to get that perfectly smooth sauce.
- Loosen the sauce with extra milk, if needed.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- I used my silicone steamer basket*.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
