Description

Tender Instant Pot steamed potatoes get folded into a creamy, homemade cheese sauce loaded with bacon for the ultimate comfort side dish.


Ingredients

Scale
  • 1 1/2 pounds Russet potatoes, peeled and sliced into 1/4 inch rounds
  • 2 Tbsp butter
  • 1 Tbsp onion pulp
  • 2 Tbsp flour
  • 1 cup milk, warmed
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed rosemary
  • Pinch of smoked paprika
  • 1/2 cup bacon crumbles
  • 1/2 cup Colby Monterey Jack Blend

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket (try not to stack potatoes directly on top of each other, rather scatter them into the basket). 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid. Remove steamer basket and discard water.
  3. Turn Instant Pot to the sauté setting. When display says HOT add in butter and let it melt. Add in the onion pulp and stir for 30 seconds. Sprinkle in the flour and whisk into the butter. 
  4. Pour in the milk, a little at a time, and whisk it in until smooth and thickened. Stir in the salt, pepper, garlic powder, rosemary and paprika. 
  5. Turn off Instant Pot. Fold in the potatoes, bacon and cheese.
  6. Serve and enjoy!
