Description

A quick Instant Pot pasta dish with tender broccoli, cheesy goodness, and simple seasonings for a comforting, no-fuss meal on the nights you don’t want to cook!


Ingredients

Scale
  • 2 1/2 cups chicken broth
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • Pinch of kosher salt
  • 8 ounces wide egg noodles
  • 8 ounces fresh broccoli florets
  • 1 cup cottage cheese
  • 1 cup shredded sharp cheddar

Instructions

  1. Pour broth into Instant Pot. Add in the pepper, onion powder, garlic powder and salt. Sprinkle in the noodles. Add broccoli evenly over the top of the noodles.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. 
  3. Stir in the cottage cheese and cheddar. 
  4. Scoop onto plates and enjoy!
