Holy Casserole–Instant Pot or slow cooker sausage with potatoes, mushrooms, Rotel tomatoes, spinach and cream cheese.

Instant Pot Sausage with potatoes and Rotel

Holy Casserole

Happy Easter! I hope you all have a lovely holiday worshiping and spending time with family and friends. Holy yum dinner! This casserole is based on Holy Hashbrown Casserole from Food.com. It has tons of yummy flavor from the sausage, cream cheese and Rotel tomatoes with green chiles. It’s an all-in-one-pot meal which I love for sake of ease.

Ingredients/Substitution Ideas

  • Ground sausage–I used Jimmy Dean. You can also use Italian sausage which I actually think would be better.
  • Onion–or shallot
  • Mushrooms
  • Chicken broth–or beef broth
  • Potatoes–I used Russet
  • Rotel–I used mild
  • Cream cheese–or Velveeta
  • Green pepper–or red, orange, yellow bell pepper
  • Spinach–fresh or frozen

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage. Break up the sausage and add in the onions and mushrooms. Brown for 5 minutes. Drain off excess grease.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the potatoes. Dump in the Rotel, cream cheese and green pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.

Stir in the spinach. Gently stir until cream cheese is incorporated. If desired you can make a cornstarch slurry to thicken the sauce. 

Serve and enjoy!

Notes/Tips

  • This is an all in one pot meal but you can serve it alongside some crusty bread to soak up the sauce.
  • This recipe is gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Instant Pot or slow cooker sausage with potatoes, mushrooms, Rotel tomatoes, spinach and cream cheese.


Ingredients

Scale
  • 1 pound ground sausage
  • 1/2 cup diced onion
  • 4 ounces sliced mushrooms
  • 1/2 cup chicken broth
  • 1 pound peeled and cubed potatoes
  • 1 (10 oz) can Rotel (I used mild)
  • 4 ounces cream cheese (or Velveeta)
  • 1/4 cup diced green pepper
  • 1 cup chopped spinach (fresh or frozen)

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage. Break up the sausage and add in the onions and mushrooms. Brown for 5 minutes. Drain off excess grease.

  5. Stir in the spinach. Gently stir until cream cheese is incorporated. If desired you can make a cornstarch slurry to thicken the sauce. 
  6. Serve and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the sausage. Break up the sausage and add in the onions and mushrooms. Brown for 5 minutes. Drain off excess grease. Transfer to the slow cooker.
  2. Add in the broth, potatoes, Rotel and green pepper. Stir.
  3. Cover and cook on low for 3 hours. Add in the cream cheese and cook for another 30 minutes. 
  4. Stir in the spinach. Stir gently until cream cheese is incorporated. If desired you can make a cornstarch slurry to thicken the sauce. 
  5. Serve and enjoy!

      Veggie Swap & Add-In Ideas
      Replace the Mushrooms

      Zucchini → Dice into small cubes so it softens nicely without getting mushy.

      Yellow squash → Same as zucchini; adds mild sweetness.

      Celery → Gives a little crunch and savory flavor without being overpowering.

      Replace or Add to the Green Pepper

      Red, Orange, or Yellow Bell Peppers → Sweeter and a bit milder than green pepper.

      Poblano Peppers → For a slightly smoky, mild heat.

      Jalapeño → Use sparingly if you want a spicy kick.

      Replace or Add to the Spinach

      Kale → Holds up better than spinach, especially if you like a little bite. Chop finely for best texture.

      Swiss Chard → Similar to spinach but sturdier and slightly earthy.

      Frozen Mixed Veggies → A shortcut option if you want a little variety without extra chopping.

      Other Great Additions

      Carrots → Dice them small so they soften in the same timeframe as the potatoes.

      Corn → Pairs perfectly with the Rotel and sausage for a slightly sweeter note.

      Green Beans → Cut into bite-size pieces; they add color and texture.

      Cauliflower or Broccoli → Stir in near the end so they don’t overcook and turn mushy.
