Daydream Casserole
If you’re dreaming about a perfect Instant Pot dish that you can make for dinner tonight this one might just be it. I love this dish because it’s a dump and go recipe. It only takes 1 minute to pressure cook. It is an all-in-one-pot meal combining carbs, protein and vegetables in one dish. Not to mention that it tastes awesome! My son gave me a hug after he ate this because he loved it so much. If you’re a fan of chicken broccoli fettuccine alfredo types of foods you’ll like this one.
Ingredients/Substitution Ideas
- Chicken broth–or water and better than bouillon chicken base
- Garlic powder
- Black pepper
- Egg noodles
- Chopped cooked chicken–I used rotisserie chicken
- Frozen broccoli
- Cream cheese
- Kosher salt
- Heavy cream–or milk, half and half
- Parmesan cheese
- Bacon crumbles
Steps
Add broth, garlic powder and pepper into Instant Pot.

Sprinkle in the egg noodles. Add chicken, broccoli and cream cheese on top of the noodles. Sprinkle a pinch of salt over the broccoli.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.

Stir in the cream, parmesan and bacon.

Serve and enjoy!


Notes/Tips
- Serve with a side of garlic bread and a green salad or garlic green beans.
- Can I use fresh broccoli instead of frozen? Yes you can. Cut up the broccoli into florets and place on top, use the same cooking time.
- What if I like more al dente broccoli? Cook the broccoli separately on the stove or the microwave.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
