Description

Chicken, bacon, ranch and cheddar with potatoes make a perfect Instant Pot dinner for tonight!


Ingredients

Scale
  • 1 1/4 pounds chicken tenderloins (or chicken thighs, cut into cubes)
  • 1 1/2 pounds yukon gold potatoes, cut into 1 inch cubes
  • 3 Tbsp Hidden Valley dry ranch dressing mix
  • 1/2 cup sour cream
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup bacon crumbles
  • 1 Tbsp chopped chives

Instructions

  1. Pour 1 ½ cups of water into bottom of Instant Pot. Add the chicken and potatoes into a steamer basket. Place the steamer basket into the Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  3. Set steamer basket aside. Discard the water in the Instant Pot. Pour the potatoes and chicken from the steamer basket into the Instant Pot liner. 
  4. Stir in the dressing mix, sour cream, cheese, bacon and chives to coat the chicken and potatoes. 
  5. Serve and enjoy!
