Description
Chicken, bacon, ranch and cheddar with potatoes make a perfect Instant Pot dinner for tonight!
Ingredients

- 1 1/4 pounds chicken tenderloins (or chicken thighs, cut into cubes)
- 1 1/2 pounds yukon gold potatoes, cut into 1 inch cubes
- 3 Tbsp Hidden Valley dry ranch dressing mix
- 1/2 cup sour cream
- 3/4 cup shredded cheddar cheese
- 1/2 cup bacon crumbles
- 1 Tbsp chopped chives
Instructions
- Pour 1 ½ cups of water into bottom of Instant Pot. Add the chicken and potatoes into a steamer basket. Place the steamer basket into the Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Set steamer basket aside. Discard the water in the Instant Pot. Pour the potatoes and chicken from the steamer basket into the Instant Pot liner.
- Stir in the dressing mix, sour cream, cheese, bacon and chives to coat the chicken and potatoes.
