Description
A creamy, cheesy, bacon-loaded comfort dish with tender potatoes, green beans, sweet corn and smoky ham—guaranteed to be a hit every time!

- 2 pounds red potatoes, cut into 1/2 inch cubes
- 1 cup fresh green beans, cut into 1 inch pieces
- 6 slices of thick cut bacon
- 1/2 cup sour cream
- 2 ounces cream cheese
- 3 Tbsp dry ranch dressing mix
- 1 tsp garlic powder
- 1 tsp black pepper
- Dash of smoked paprika
- 1 Tbsp dried chives
- 8 ounce cubed ham
- 1 cup frozen sweet corn
- 1 cup shredded cheddar cheese
Instructions
- Pour 1 ½ cups water into bottom of Instant Pot. Place the potatoes and green beans into a steamer basket and drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid. Move steamer basket out of pot and set aside. Discard the water.
- While the potatoes are steaming cook the bacon. I used my air fryer* to cook the bacon until crispy. Set on a paper towel lined plate, crumble and set aside.
- In a bowl mix together the sour cream, cream cheese, ranch dressing mix, garlic powder, black pepper, smoked paprika and chives.
- Add the potatoes into Instant Pot fold in the creamy mixture, ham and corn.
- Heat oven to 375° F. Spread the mixture into a 9×13 inch baking dish. Sprinkle with the bacon crumbles and cheese. Bake for 20-30 minutes.
