Description

A creamy, cheesy, bacon-loaded comfort dish with tender potatoes, green beans, sweet corn and smoky ham—guaranteed to be a hit every time!


Ingredients

  • 2 pounds red potatoes, cut into 1/2 inch cubes
  • 1 cup fresh green beans, cut into 1 inch pieces
  • 6 slices of thick cut bacon
  • 1/2 cup sour cream
  • 2 ounces cream cheese
  • 3 Tbsp dry ranch dressing mix
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • Dash of smoked paprika
  • 1 Tbsp dried chives
  • 8 ounce cubed ham
  • 1 cup frozen sweet corn
  • 1 cup shredded cheddar cheese

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Place the potatoes and green beans into a steamer basket and drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid. Move steamer basket out of pot and set aside. Discard the water. 
  2. While the potatoes are steaming cook the bacon. I used my air fryer* to cook the bacon until crispy. Set on a paper towel lined plate, crumble and set aside. 
  3. In a bowl mix together the sour cream, cream cheese, ranch dressing mix, garlic powder, black pepper, smoked paprika and chives. 
  4. Add the potatoes into Instant Pot fold in the creamy mixture, ham and corn.
  5. Heat oven to 375° F. Spread the mixture into a 9×13 inch baking dish. Sprinkle with the bacon crumbles and cheese. Bake for 20-30 minutes. 
  6. Serve and enjoy!
