Grandma’s Slop

This fast and easy creamy Instant Pot chicken and pasta dish combines tender chicken, rich seasonings, and a velvety sauce for an effortless, dump-and-go, tasty dinner. The recipe is adapted from Mrs Happy Homemaker who said that her grandma would call this dish “slop”–lol! We enjoyed this dinner and when I woke up this morning the leftovers were eaten by someone in the night 🤨.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Cavatappi pasta–or macaroni, penne
  • Boneless skinless chicken thighs–or chicken breasts
  • Onion powder
  • Garlic powder
  • Black pepper
  • Kosher salt
  • Smoked paprika
  • Campbell’s cream chicken chicken with herbs soup–or cream of chicken, cream of celery
  • Tomato sauce
  • Sugar
  • Balsamic vinegar
  • Mozzarella cheese–I like whole milk mozzarella cheese. You can also swap in Parmesan or a mix of Italian cheeses if you prefer.

Steps

Pour broth into Instant Pot. Add in the pasta. Then lay the chicken on top of the pasta. Sprinkle onion powder, garlic powder, pepper, salt and paprika on top of the chicken.

Dump soup, tomato sauce, sugar and balsamic on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting and remove the lid.

Stir. Sprinkle the mozzarella cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with a green salad or some roasted garlic green beans.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with balsamic vinegar are Chicken Margherita Pasta and Flank Steak.

Description

An easy Instant Pot recipe with tender bites of chicken, cavatappi pasta, a creamy sauce and mozzarella cheese.


Ingredients

Scale
  • 2 cups chicken broth
  • 8 ounces cavatappi pasta
  • 20 ounces boneless skinless chicken thighs, cut into 1/2 inch cubes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • Pinch of kosher salt
  • Pinch of smoked paprika
  • 1 (10.5 ounce) can Campbell’s cream chicken chicken with herbs soup
  • 1 (8 ounce) can tomato sauce
  • Pinch of sugar
  • 1/2 tsp balsamic vinegar
  • 1/2 cup shredded mozzarella cheese

Instructions

    We have mixed feelings about this recipe. My husband liked it, my 11yo, who I thought would hate it, actually thought it was good, but too saucy, and I did not care for it and thought it tasted kind of like canned spaghetti-os. It was, however, easy to make. I think it would have worked a little better if I had stirred everything together before sealing the lid, but the recipe said “do not stir.”

      yeah, the do not stir is so that the burn message doesn’t happen. Sorry it was a mixed bag!

    I made this recipe tonight and was a little skeptical about how my 3 very picky young grandkids would react to it, but after telling them it was “spaghetti with fun noodles,” they absolutely gobbled it up! We always double recipes for our family of 6, but we actually had to limit additional helpings to 2 each so my husband and I would still have leftovers to take to work for lunch tomorrow. I think next time I will triple the recipe!
