Golden Corn Ranch Beef Casserole–an easy Instant Pot dinner with ground beef, rotini, corn, ranch dressing mix and melty pepper jack cheese.

Golden Corn Ranch Beef Casserole
This is an easy one-pot, weeknight meal. I love using ranch dressing mix to flavor meals. It gives a bit of a tangy taste. The corn, green bell pepper and pepper jack all play well off each other. And the cream cheese gives just a bit of creaminess without being overpowering or too heavy. We loved this one with diced grape tomatoes on top. Enjoy!
Ingredients/Substitution Ideas
- Ground beef–or ground turkey
- Onion–or shallot
- Kosher salt
- Black pepper
- Garlic powder–or 1 Tbsp minced fresh garlic
- Onion powder
- Beef broth–or water and Better than Bouillon beef base
- Rotini pasta–or penne or ziti
- Dry ranch dressing mix–I used Hidden Valley brand. I buy the big container at Costco.
- Cream cheese–or Neufchâtel cheese
- Frozen corn–or canned corn
- Green bell pepper–or red or yellow bell pepper
- Pepper jack cheese–or cheddar or Monterey Jack
- Diced tomatoes
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and onion powder.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the rotini and sprinkle the ranch dressing mix on top. Dump in the cream cheese, corn and the bell pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the pepper jack.

Scoop onto plates and top with tomatoes, if desired.

Notes/Tips
- Serve with green salad, roasted broccoli or green beans.
- Want more veggies? Stir in spinach at the end or add mushrooms when browning the beef.
- I used my 6 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. You can freeze it, but the texture of the pasta may soften a bit.
