Description

An easy Instant Pot dinner with ground beef, rotini, corn, ranch dressing mix and melty pepper jack cheese.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 small onion, diced
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cup beef broth
  • 8 oz rotini
  • 3 Tbsp dry ranch dressing mix
  • 4 oz cream cheese
  • 2 cups frozen golden corn
  • 1 green bell pepper, cored and diced
  • 1 cup shredded pepper jack cheese
  • Diced tomatoes, optional

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and onion powder. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rotini and sprinkle the ranch dressing mix on top. Dump in the cream cheese, corn and the bell pepper.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir in the pepper jack.
  6. Scoop onto plates and top with tomatoes, if desired.
