Description
An easy Instant Pot dinner with ground beef, rotini, corn, ranch dressing mix and melty pepper jack cheese.

- 16 oz lean ground beef
- 1 small onion, diced
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 cup beef broth
- 8 oz rotini
- 3 Tbsp dry ranch dressing mix
- 4 oz cream cheese
- 2 cups frozen golden corn
- 1 green bell pepper, cored and diced
- 1 cup shredded pepper jack cheese
- Diced tomatoes, optional
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and onion powder.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rotini and sprinkle the ranch dressing mix on top. Dump in the cream cheese, corn and the bell pepper.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the pepper jack.
- Scoop onto plates and top with tomatoes, if desired.
