Georgia Roast–tender, juicy beef chuck roast slow-cooked or pressure-cooked with ranch seasoning, au jus mix, and tangy pickled onions that melt into the most flavorful, salty, savory juices. Minimal effort required!

Okay, this roast is seriously so good…I couldn’t stop eating it. The meat is perfectly seasoned, especially when you ladle some of that juice on top. I don’t even usually care about meat, but this one had me going back for seconds. The onions get super mild and flavorful, almost melty. It’s the kind of dinner that makes your kitchen smell amazing all day, and the leftovers are just as good (if not better). (Recipe adapted from Georgia Pot Roast on All Recipes).

Ingredients/Substitution Ideas

  • Beef Broth–or water and Better than Bouillon
  • Beef Chuck Roast–or a rump roast
  • Au Jus Packet–find next to gravy
  • Ranch Dressing Mix–I like Hidden Valley brand
  • Pickled Onions–find next to the pickles

Steps

Add broth into Instant Pot. Add in the roast. Sprinkle the au jus seasoning and ranch seasoning on top of the roast. Add entire contents of onion jar into the Instant Pot. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 90 minutes. When time is up let pot sit for 20-30 minutes and then move valve to venting and remove the lid.

Shred the meat and serve it with juices from the pot.

Instant Pot Ranch Au Jus Roast

Notes/Tips

  • Serve with mashed potatoes, garlic bread, roasted green beans, or buttered egg noodles. It’s also amazing piled on toasted rolls with a drizzle of the cooking juices.
  • Use pepperoncini instead of pickled onions for a Mississippi-style twist.
  • Swap the chuck roast for pork shoulder for a different protein.
  • This recipe can be gluten free. Just make sure your au jus and ranch packets are certified gluten-free (brands vary).
  • Don’t skip the natural pressure release in the Instant Pot. It makes a big difference in tenderness.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4-5 days or in the freezer for up to 3 months.

  • 1 oz packet ranch dressing mix
  • 1 (16 oz) jar pickled onions

Slow Cooker Instructions:

  1. Add broth into slow cooker. Add in the roast. Sprinkle the au jus seasoning and ranch seasoning on top of the roast. Add entire contents of onion jar into the slow cooker.
  2. Cover and cook on low for 8-10 hours until meat is tender and falling apart.
  3. Shred the meat and serve it with juices from the pot.

    I’m assuming in the notes where you said “Store leftovers in an airtight container* in the refrigerator for up to 45 days or in the freezer for up to 3 months.” you meant 4-5 days in the fridge…
