Cozy Cheeseburger Macaroni Soup–browned ground beef, onions, carrots, tomato paste, and tender macaroni pressure cooked (or slow cooked) in savory beef broth, then finished with a splash of cream and melty cheddar-pepper jack for an ultra-comforting bowl.

Cozy Cheeseburger Macaroni Soup
My son Skyler and his friend Eli took this soup down immediately. Skyler said “it was perfect on every front!” Eli kept asking me what the recipe was. It really was a delicious soup even though I only got a tiny bowl of it. This is a total family-friendly, weeknight winner and one of those recipes you’ll make again and again. Try this one out this week!
Ingredients/Substitution Ideas
- Lean Ground Beef–or ground turkey
- Diced Onion–fresh or frozen
- Garlic Powder
- Kosher Salt
- Black Pepper
- Italian Seasoning–or dried basil and oregano
- Paprika
- Beef Broth–or water and Better Than Bouillon beef base
- Carrots–or frozen sliced carrots
- Uncooked Macaroni–or small shells or ditalini
- Tomato Paste
- Heavy Cream–or half and half
- Shredded Pepper Jack and Cheddar Blend–or Colby Jack
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the garlic powder, salt, pepper, Italian seasoning and paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Dump in the carrots, macaroni and tomato paste.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes (or 3 minutes on low pressure). When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir a cup of the hot soup into the heavy cream to temper it. Stir it into the pot. Stir in the cheese.



Ladle into bowls and serve.

Notes/Tips
- Serve with a slice of crusty bread and a green side salad.
- I used my 6 quart Instant Pot*. You can also make this in a 3, 4 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 1/2 cup diced onion
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper

- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the garlic powder, salt, pepper, Italian seasoning and paprika. Transfer to slow cooker.
- Stir in the broth, carrots and tomato paste.
- Cover and cook on low for 2 hours. Stir in the macaroni and cook for 25 more minutes.
- Stir a cup of the hot soup into the heavy cream to temper it. Stir it into the slow cooker. Stir in the cheese.
- Ladle into bowls and serve.
Notes
This recipe is easy to double. Double all ingredients and keep the cooking time the same.

We made this last night and it was fantastic! I doubled the recipe and used my instant pot. I didn’t have tomato paste so I used a.small can of tomato sauce for some of the broth. Will definitely make again.
