Mr. D’s Casserole–an Instant Pot dinner with ground beef, salsa, bowtie pasta, beans, and melted cheddar that cooks up in minutes and tastes like a cheesy Tex-Mex pasta night in a bowl!

Mr. D’s Casserole

This dinner is pasta night meets taco night. It’s cheesy and packed with flavor from the salsa, green chiles, and spices. My family loved it and I loved that it was a one pot meal with easy clean up. This is a good one for a busy weeknight. (Recipe adapted from Mr. D’s Taco Casserole).

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion
  • Jalapeno
  • Kosher salt
  • Black pepper
  • Beef broth
  • Chili powder
  • Cumin
  • Garlic powder
  • Bowtie pasta (Farfalle)–or penne
  • Salsa–or picante sauce
  • Diced green chiles
  • Pinto beans–or black beans
  • Cheddar cheese–or mexican blend

Steps

(Watch me demonstrate this recipe on my YOUTUBE VIDEO. Please subscribe to my channel.)Turn the Instant Pot to sauté and brown the beef with onion and jalapeño, then drain the grease and season with salt and pepper. Add broth and scrape the bottom, then stir in the spices. Layer in the pasta, salsa, green chiles, and beans without stirring. Pressure cook for 5 minutes, let sit 5–10 minutes, then release pressure. Stir in the cheese and serve.

Easy Instant Pot Mexican Pasta

Notes/Tips

  • Serve with a green salad. A dollop of sour cream or guacamole goes great on top of the pasta.
  • You can use just about any short pasta shape. Penne, rotini, shells, elbows, or cavatappi all work great.
  • Use black beans or kidney beans instead of pinto beans.
  • Add corn or diced bell peppers for extra color and sweetness. Try adding in a small can of sliced olives.
  • Try pepper jack cheese for more kick or Monterey Jack for a creamier finish.
  • Stir in a spoonful of sour cream or cream cheese after cooking for extra creaminess.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

An Instant Pot dinner with ground beef, salsa, bowtie pasta, beans, and melted cheddar that cooks up in minutes and tastes like a cheesy Tex-Mex pasta night in a bowl!


Ingredients

Scale
  • 16 oz lean ground beef
  • 1/2 cup chopped onion
  • 1 jalapeno, cored and diced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 cups beef broth
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 8 oz bowtie pasta (Farfalle)
  • 1 cup salsa
  • 1 (4 oz) can diced green chiles
  • 1 (15 oz) can pinto beans, rinsed and drained
  • 4 oz shredded cheddar cheese

Instructions

  1. Heat Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion and jalapeno. Brown for about 5 minutes. Drain off excess grease. Stir in the salt and pepper.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Add in the chili powder, cumin and garlic powder. Sprinkle in the pasta. Dump salsa, green chiles and beans evenly over the top of the pasta. Don’t stir. 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  4. Stir in the cheese. Serve and enjoy!

    I am assuming salt and pepper goes in with other spices.
