Family Reunion Casserole

I got this recipe off of food.com and made it into an Instant Pot recipe. The original author said,”Chicken casserole made famous at my grandmother’s family reunions.” I love the thought of that! Do you have special foods that you remember specifically from your grandma’s house? I always loved my grandma’s chocolate chips cookies and her parker house rolls. Mmm!

This recipe is super easy! You’ll love the crispy cracker topping and the tender bites of chicken and vegetables. The creamy sauce envelopes the chicken and tastes great served over rice.

I love how you can make it all in one pot if you have an air fryer lid. If you don’t have one…don’t worry! You can still make it in your oven. I put both instructions in the recipe card if you scroll all the way down.

Ingredients/Substitution Ideas

  • Chicken broth
  • Chicken tenderloins–fresh or frozen
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Kosher salt
  • Black pepper
  • Paprika–or ¼ tsp of smoked paprika
  • Frozen vegetables–I had broccoli, carrots and cauliflower
  • Cream of chicken soup–-or cream of mushroom
  • Sour cream–or plain yogurt
  • Ritz crackers–or club crackers
  • Monterey jack cheese–or mozzarella

Steps

Add broth, chicken, garlic powder, onion powder, Italian seasoning, salt, pepper and paprika into Instant Pot. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes (frozen) or 3 minutes (fresh). When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir the vegetables into the pot. Turn the pot to saute setting and heat the vegetables through. Turn off saute setting. 

Stir in the cream of chicken soup and sour cream.

If you have an air fryer lid: sprinkle the Ritz on top and place air fryer lid on top. Bake at 350 for 10 minutes. Then sprinkle the cheese on top and air fry for 1 minute at 400 degrees. If you want to bake in the oven: Spread the mixture into a 9×9 inch baking dish. Sprinkle the Ritz on top. Bake at 350 for 30 minutes. Sprinkle the cheese on top and bake for 5 more minutes.

Serve the casserole as is or serve on top of hot cooked rice, mashed potatoes or noodles.   

Notes/Tips

  • You can serve this as an all in one pot dinner or you can make a side salad to go along with it. I like serving this chicken, sauce and vegetables over hot cooked rice.
  • You can easily double this recipe. Double the ingredients and keep the cooking time the same.
  • Frozen vegetables that would taste good in this casserole are broccoli, peas, green beans, etc.
  • I used my Duo Crisp 6 quart Instant Pot*.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with chicken tenderloins are Instant Pot Restaurant Chicken and Instant Pot Chicken Julienne.

Description

Family Reunion Casserole is an Instant Pot chicken dish with vegetables in a creamy sauce and topped with Ritz cracker crumbs.


Ingredients

Scale
  • 1/2 cup chicken broth
  • 8–10 chicken tenderloins (fresh or frozen)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 (12 oz) bag frozen vegetables (I had broccoli, carrots and cauliflower)
  • 1 (10.5 oz) can cream of chicken soup
  • 1/4 cup sour cream
  • 15 Ritz crackers, crushed
  • 1/2 cup shredded monterey jack cheese

Instructions

  1. Add broth, chicken, garlic powder, onion powder, Italian seasoning, salt, pepper and paprika into Instant Pot.

    So didn’t really understand. Make it in the instant pot then put all that in a casserole dish with crackers on top and bake another 30 plus min? I don’t have the air fryer lid.

    This dish is really good. Instead of a 12 oz bag of veggies I used a 20 oz Great Value Deluxe Stir Fry. IMHO I could have used more. I finished mine in the oven because I don’t have an air fryer lid.
