Description
Family Reunion Casserole is an Instant Pot chicken dish with vegetables in a creamy sauce and topped with Ritz cracker crumbs.

- 1/2 cup chicken broth
- 8–10 chicken tenderloins (fresh or frozen)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 (12 oz) bag frozen vegetables (I had broccoli, carrots and cauliflower)
- 1 (10.5 oz) can cream of chicken soup
- 1/4 cup sour cream
- 15 Ritz crackers, crushed
- 1/2 cup shredded monterey jack cheese
Instructions
- Add broth, chicken, garlic powder, onion powder, Italian seasoning, salt, pepper and paprika into Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes (frozen) or 3 minutes (fresh). When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir the vegetables into the pot. Turn the pot to saute setting and heat the vegetables through. Turn off saute setting.
- Stir in the cream of chicken soup and sour cream.
- If you have an air fryer lid: sprinkle the Ritz on top and place air fryer lid on top. Bake at 350 for 10 minutes. Then sprinkle the cheese on top and air fry for 1 minute at 400 degrees. If you want to bake in the oven: Spread the mixture into a 9×9 inch baking dish. Sprinkle the Ritz on top. Bake at 350 for 30 minutes. Sprinkle the cheese on top and bake for 5 more minutes.
- Serve the casserole as is or serve on top of hot cooked rice, mashed potatoes or noodles.
