Description

Family Reunion Casserole is an Instant Pot chicken dish with vegetables in a creamy sauce and topped with Ritz cracker crumbs.


Ingredients

Scale
  • 1/2 cup chicken broth
  • 810 chicken tenderloins (fresh or frozen)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 (12 oz) bag frozen vegetables (I had broccoli, carrots and cauliflower)
  • 1 (10.5 oz) can cream of chicken soup
  • 1/4 cup sour cream
  • 15 Ritz crackers, crushed
  • 1/2 cup shredded monterey jack cheese

Instructions

  1. Add broth, chicken, garlic powder, onion powder, Italian seasoning, salt, pepper and paprika into Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes (frozen) or 3 minutes (fresh). When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  3. Stir the vegetables into the pot. Turn the pot to saute setting and heat the vegetables through. Turn off saute setting. 
  4. Stir in the cream of chicken soup and sour cream.
  5. If you have an air fryer lid: sprinkle the Ritz on top and place air fryer lid on top. Bake at 350 for 10 minutes. Then sprinkle the cheese on top and air fry for 1 minute at 400 degrees. If you want to bake in the oven: Spread the mixture into a 9×9 inch baking dish. Sprinkle the Ritz on top. Bake at 350 for 30 minutes. Sprinkle the cheese on top and bake for 5 more minutes.
  6. Serve the casserole as is or serve on top of hot cooked rice, mashed potatoes or noodles.
