Easy Peasy Casserole–an easy Instant Pot pasta with a pizza flare. This dish has ground beef, pepperoni, bell pepper, zesty tomato sauce, tender cavatappi and a sprinkling of parmesan cheese.

Easy Peasy Casserole

This is an easy dish to make with lots of yummy pizza flavor. Kids and adults will love this dinner. You can adapt it to your preferences by including more “toppings” like mushrooms and olives or just keep it simple with only pepperoni. It’s a cinch to cut this recipe in half or double it to serve a crowd, depending on how many people you’re looking to serve.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion–yellow or white
  • Kosher salt
  • Italian seasoning
  • Beef broth–or water and Better than Bouillon
  • Cavatappi pasta–or penne
  • Tomato sauce
  • Tomato paste
  • Pepperoni
  • Green bell pepper
  • Parmesan cheese–or mozzarella

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and brown for 5 minutes. Drain off excess grease. Stir in the salt and Italian seasoning.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the pasta. Dump tomato sauce and paste over the top of hte pasta. Add in the pepperoni and the bell pepper. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir well. Serve each individual serving with a bit of parmesan cheese on top.

Notes/Tips

  • Serve with green salad and garlic bread.
  • Try adding in some sliced mushrooms with the onions. Another option is to add in some sliced olives when you add in the green pepper.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 2 tsp italian seasoning
  • 2 1/2 cups beef broth
  • 8 ounces cavatappi pasta
  • 2 (8 oz) cans tomato sauce
  • 2 Tbsp tomato paste
  • 3–4 ounces of pepperoni
  • 1 green bell pepper, cored and diced
  • Parmesan cheese, for topping

Instructions

    Delicious recipe! I used whole grain rotini, extra lean hamburger, turkey pepperoni and added 1/2 chopped zucchini. Leftovers were just as good with a splash of water when warming up. Thank you!
