Church Meeting Casserole–a one-pot Instant Pot pasta made with Italian sausage, vegetables, cavatappi, and a cheesy tomato sauce.

Church Meeting Casserole
This is the perfect church supper dish. It’s super filling and you can just keep it warm in the Instant Pot until it’s time to eat. It’s got that creamy, cheesy, tomato-y vibe that everybody loves. It’s nothing too wild, so even the picky eaters will be happy. It’s a total crowd pleaser without a ton of effort.
Ingredients/Substitution Ideas
- Italian sausage
- Onion
- Mushrooms
- Chicken broth–or beef broth
- Cavatappi pasta–or elbow macaroni
- Garlic powder
- Onion powder
- Italian seasoning
- Crushed tomatoes
- Carrot
- Spinach–fresh or frozen
- Cottage cheese–or ricotta
- Parmesan cheese
Steps
Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and mushrooms. Brown for 5 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the pasta. Dump in the garlic powder, onion powder, Italian seasoning, tomatoes and carrot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the spinach, cottage cheese and parmesan cheese. Serve and enjoy!

Notes/Tips
- Serve with a green salad and garlic bread.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- After you sprinkle in the pasta and dump in the tomatoes and seasonings, resist the urge to stir. Layering keeps the pasta from sticking and the sauce from burning.
- Double it for a crowd. This scales up really well. Perfect for potlucks or feeding hungry teenagers. Just double the ingredients and keep the cooking time the same.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

It was good made with Campanelle pasta, Will add fresh garlic and use ricotta cheese if I make it again.
could you make this in a slow cooker instead?
I wouldn’t. Pasta is pretty hit or miss in the crockpot.
