Disney’s Pineapple Cobbler has sweet, cooked pineapple topped with a crumbly topping. It tastes great topped with a scoop of vanilla ice cream!

Disney’s Pineapple Cobbler

If you visit the restaurant at Disney’s Aulani Resort in Hawaii you might be treated to the chef’s special, a pineapple cobbler dessert. Hawaii is famous for pineapple so it makes sense to use it as the base of a fruit cobbler dessert. My version is a bit different so that it can be adapted to the Instant Pot with air fryer lid. Don’t worry if you don’t have an air fryer lid you can still make this recipe in your oven. I love all cobblers and this was no exception. I do have to recommend a big scoop of vanilla ice cream on top! It’s not the same without it 😉

Ingredients you’ll need…

  • Fresh pineapple–or frozen pineapple. I haven’t tried this recipe with canned pineapple so I can’t say if that would work or not. I assume it would work but not taste nearly as good.
  • Brown sugar
  • Cornstarch
  • Butter
  • White sugar
  • Flour
  • Baking powder
  • Cinnamon

Steps

If you have an Instant Pot with an air fryer lid* you can make this recipe in the IP. If not, try the oven instructions (they are listed in the recipe card below).

  1. Cook the pineapple: Turn Instant Pot to sauté setting. When display says HOT add in the pineapple and brown sugar. Cook until the sugar melts. Stir together the cornstarch and water in a small bowl until smooth. Stir the cornstarch slurry into the pot. Bring to a boil and then turn off the Instant Pot.
  2. Make the crumbly topping: In a small mixing bowl add the butter, white sugar, flour, baking powder and cinnamon. Work the mixture with a fork or pastry blender* until it forms a crumbly texture. Sprinkle the mixture over the pineapple. 
  3. Air fry: Place the air fryer lid on top and bake for 15 minutes at 300° F. Then turn air fryer lid to 425 and bake for 3-5 minutes, or until top is browned.
  4. Serve topped with a scoop of vanilla ice cream.

Notes/Tips

  • Serve with vanilla ice cream (I like Farr’s brand the best) or whipped cream.
  • I used my 6 quart duo crisp instant pot*.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.
  • You might also want to try Disney Potatoes.

Description

Ingredients

  • 2 1/2 cups fresh or frozen pineapple, cut into chunks
  • 3 Tbsp brown sugar
  • 1 1/2 Tbsp cornstarch
  • 2 Tbsp water
  • 3 Tbsp butter
  • 1/4 cup white sugar
  • 1/2 cup flour
  • 1/8 tsp baking powder
  • 1/4 tsp cinnamon

Instructions

  3. Place the air fryer lid on top and bake for 15 minutes at 300° F. Then turn air fryer lid to 425 and bake for 3-5 minutes, or until top is browned.
  4. Serve topped with a scoop of vanilla ice cream.

Oven Instructions:

  1. Heat a pan over medium high heat. Add in the pineapple and brown sugar. Cook until the sugar melts. Stir together the cornstarch and water in a small bowl until smooth. Stir the cornstarch slurry into the pan. Bring to a boil and then turn off the heat.
  2. Add the pineapple to a small square baking dish (8×8). 
  3. In a small mixing bowl add the butter, white sugar, flour, baking powder and cinnamon. Work the mixture with a fork or pastry blender until it forms a crumbly texture. Sprinkle the mixture over the pineapple. 
  4. Bake at 350° F for 45 minutes, or until golden brown. 
  5. Serve topped with a scoop of vanilla ice cream.
