Instant Pot Southern Peach Cobbler

I’m in love with this easy southern peach cobbler! It’s got the perfect amount of sweetness…it’s not overly sugary. The cobbler tastes amazing with a scoop of vanilla ice cream on top. Because I chose to use canned peaches it came together very quickly. If you’d like you can also use fresh or frozen peaches.

This recipe only makes a small batch. Just enough for 4 people. If you’d like to double the recipe you can. However I would suggest using the oven instructions if you double it. Deep dish desserts do not work well in the Instant Pot.

I really want to make this again tonight! I have an extra can of peaches so I just might. Don’t tell my family though because I might eat the whole thing by myself.

Ingredients/Substitution Ideas

Equipment needed: This is a pot-in-pot recipe. You’ll need a trivet/sling* and a dish for pot-in-pot cooking*. You’ll also finish the recipe off with an air fryer lid*. If you don’t have this equipment I recommend following the oven instructions listed in the recipe card.

For the peaches:

  • Canned yellow peaches–or 3 1/2 to 4 cups of sliced fresh or frozen peaches
  • White sugar
  • Brown sugar
  • Ground cinnamon
  • Ground nutmeg
  • Lemon juice
  • Cornstarch

For the topping:

  • All purpose flour
  • White sugar
  • Brown sugar
  • Baking powder
  • Salt
  • Butter

Steps

  1. Prepare peaches: In a pot-in-pot dish add the drained peaches, 1 Tbsp white sugar, 1 Tbsp brown sugar, cinnamon, nutmeg, lemon juice and cornstarch. Toss well so that the peaches are coated.
  2. Make the topping: In a small bowl stir together the flour, 2 Tbsp white sugar, 2 Tbsp brown sugar, baking powder and salt. Use a pastry blender or fork to blend in the butter until the mixture resembles coarse meal.
  3. Sprinkle the peaches with the flour mixture. Don’t cover the dish.
  4. Prepare Instant Pot for pot in pot cooking: Pour 1 ½ cups water in the bottom of the Instant Pot. Place a trivet in the bottom of the pot. Lower the pot-in-pot dish on top of the trivet.
  5. Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid.
  6. Air fry: Place the air fryer lid on top of the Instant Pot. Set the air fry button to 6 minutes at 375 degrees. Remove the lid and check for doneness. The top should be golden brown.
  7. Serve the cobbler with a scoop of vanilla ice cream. Enjoy!

Notes/Tips

  • Serve the cobbler topped with whipped cream or vanilla ice cream.
  • I used my 6 quart Duo Crisp Instant Pot*. You can also make this in a 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A small batch, super fast and easy recipe for peach cobbler. It’s the perfect summer dessert and tastes great with a scoop of vanilla ice cream on top.

Ingredients

Scale

For the peaches:

  • 1 (29 oz) can yellow peaches, drained (or 3 1/2 to 4 cups of sliced fresh peaches)
  • 1 Tbsp white sugar
  • 1 Tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 tsp lemon juice
  • 1 tsp cornstarch

For the topping:

  • 1/2 cup all purpose flour
  • 2 Tbsp white sugar
  • 2 Tbsp brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 Tbsp butter

Instructions

  1. In a pot-in-pot dish add the drained peaches, 1 Tbsp white sugar, 1 Tbsp brown sugar, cinnamon, nutmeg, lemon juice and cornstarch. Toss well so that the peaches are coated.
  2. In a small bowl stir together the flour, 2 Tbsp white sugar, 2 Tbsp brown sugar, baking powder and salt. Use a pastry blender or fork to blend in the butter until the mixture resembles coarse meal.
  3. Sprinkle the peaches with the flour mixture. Don’t cover the dish.
  4. Pour 1 ½ cups water in the bottom of the Instant Pot. Place a trivet in the bottom of the pot. Lower the pot-in-pot dish on top of the trivet.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid.
  6. Place the air fryer lid on top of the Instant Pot. Set the air fry button to 6 minutes at 375 degrees. Remove the lid and check for doneness. The top should be golden brown.
  7. Serve the cobbler with a scoop of vanilla ice cream. Enjoy!

Notes

Equipment needed: a trivet, pot-in-pot dish and an air fryer lid. If you don’t have an air fryer lid you can make the cobbler in the oven.

To make the cobbler in the oven: add the drained peaches, 1 Tbsp white sugar, 1 Tbsp brown sugar, cinnamon, nutmeg, lemon juice and cornstarch to a square baking dish. Toss well so that the peaches are coated. In a small bowl stir together the flour, 2 Tbsp white sugar, 2 Tbsp brown sugar, baking powder and salt. Use a pastry blender or fork to blend in the butter until the mixture resembles coarse meal. Sprinkle the peaches with the flour mixture. Bake at 425 degrees for 30 minutes.

To make the cobbler in the slow cooker: add the drained peaches, 1 Tbsp white sugar, 1 Tbsp brown sugar, cinnamon, nutmeg, lemon juice and cornstarch into the slow cooker. Cover and cook on high for 2-3 hours.

    Hi Karen,
What sized instant pot do I use? I would like to use my 3 quart one because my other one is an 8 quart.
I am anxious to try this recipe as it sounds relatively easy and delicious!

I used a 6 quart pot. I don’t think a 3 quart will work because the dessert will be too deep and it won’t cook properly.

I have a question. In your recipe for the peach cobbler for the oven you mention a square baking dish what size do you recommend ? 8×8, 9×13 ? what size should I use? Really would like to make this and I’m guessing 8×8?

Yes the 8×8 should be great!

Karen, I’ve noticed that questions in the comment area are not being answered. I have a question also: If I don’t have an air fryer lid, how long and at what temp would I finish it off in the oven? This looks delicious and I would really like to try it. Thanks!!!

to make completely in the oven here are instructions: Add the drained peaches, 1 Tbsp white sugar, 1 Tbsp brown sugar, cinnamon, nutmeg, lemon juice and cornstarch to a square baking dish. Bake at 425 degrees for 30 minutes.

to finish off in the oven after doing the first part in the pressure cooker: 10-15 minutes on top rack in 375 degree oven

    Hello Karen,
    Hello Karen
I am thinking of buying an Instant Pot air fryer. I don’t know which model to buy, do you have any suggestions?
    I already have a 3 quart, a 6 quart and an 8 quart.
I am hesitating between a 6 and an 8 quart.
We are 3 adults and I cook with my 6 quart. But maybe the air fryer would be better with an 8 quart for the guests?
    I’m waiting for your suggestion!
Thanks Karen, thank you very much for everything!
    Andrée

I like the duo crisp 6 quart pot. But other options are probably wonderful too!

I believe they sell just the air fry top for with one of your 6 quart or 8 quart. Why buy another instant pot when you can just buy the top?

Do I empty the water out of the Instant Pot before putting on the air fryer lid or do I just leave the water in the bottom of the Instant Pot? This sounds so good; I can hardly wait to try it.

Do you think almond flour, or maybe part almond flour would work for the topping? I’d really like to cut a few carbs when and wherever I can. 🤷🏻‍♀️😂 This sounds so yummy and I plan to use mangos that we picked from our tree in the backyard. 🤤😋

I think alternative flours will work great as this recipe doesn’t need it to raise. Alternative sugars should also work well as this isn’t a cake or bread. It’s a pretty simple pastry so using the alternatives should be fine. I was thinking about the coconut sugar as an alternative to brown sugar. Wish I could try your mango cobbler sounds great!
