Devil’s Chicken

I love this recipe because it’s the definition of easy…just toss everything in the slow cooker and let it do the work! The chicken turns out super tender and the sauce has that fun mix of sweet, savory, and a tiny kick of heat. It’s easy to double or even triple if you’re feeding a crowd. This is a basic, simple pantry recipe you’ll love. (Recipe adapted from Devilled Chicken on Great British Recipes).

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–or chicken breasts, or bone-in chicken pieces
  • Tomato sauce
  • Peach, apricot or mango jam
  • Cayenne pepper
  • Mustard powder
  • Kosher salt
  • Black pepper
  • Worcestershire sauce
  • Water
  • Cornstarch

Steps

Place chicken into slow cooker.

In a small bowl whisk together the tomato sauce, jam, cayenne, mustard powder, salt, pepper, Worcestershire and water. Pour the mixture over the chicken.

Cover and cook on low for 2-3 hours. You can also choose to keep the chicken in whole pieces, in which case you would want to cook for 4 hours on low.

If you’d like to thicken the sauce then stir the cornstarch together with 2 Tbsp of cold water until smooth. Stir the mixture into the slow cooker and turn to high. Cook without the lid until sauce thickens (about 10 minutes).

Serve and enjoy!

Notes/Tips

  • Serve with rice, potatoes, flat bread or noodles to soak up the sauce. You can also have a side of roasted or steamed veggies, or even with a green salad.
  • I used my 6 quart Ninja slow cooker.
  • This recipe is easy to double or triple.
  • To make this gluten free use gluten-free Worcestershire sauce.
  • This recipe is dairy free.
  • If you like things with a little more heat then double the amount of cayenne pepper.
  • The cornstarch step is optional but makes the sauce glossy and thick if you want it that way.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Other recipes you can make with apricot jam are Slow Cooker General Tso’s Chicken and Slow Cooker Cream Cheese Chicken Sandwiches.
