Description

An easy dump-and-go slow cooker chicken with a sweet and tangy sauce. 


Ingredients

Scale
  • 2 1/2 - 3 pounds boneless skinless chicken thighs, trimmed of excess fat and cut each into 4-6 pieces
  • 1 (8 oz) can tomato sauce
  • 2 Tbsp peach, apricot or mango jam
  • 1/8 tsp cayenne pepper
  • 1/2 tsp mustard powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1 Tbsp water
  • 1 Tbsp cornstarch (optional)

Instructions

  1. Place chicken into slow cooker.
  2. In a small bowl whisk together the tomato sauce, jam, cayenne, mustard powder, salt, pepper, Worcestershire and water. Pour the mixture over the chicken.
  3. Cover and cook on low for 2-3 hours. You can also choose to keep the chicken in whole pieces, in which case you would want to cook for 4 hours on low.
  4. If you’d like to thicken the sauce then stir the cornstarch together with 2 Tbsp of cold water until smooth. Stir the mixture into the slow cooker and turn to high. Cook without the lid until sauce thickens (about 10 minutes).
