Davy Crockett Casserole
Today’s recipe is sort of a cross between beef enchiladas and lasagna. You start with a seasoned ground beef mixture and then there’s a cottage cheese layer, lots of cheese and crunchy tortilla chips. Comfort food to the max! Recipe adapted from Davy Crockett Delight Casserole on Recipezazz.
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion–or shallot
- Enchilada seasoning mix–or fajita seasoning
- Diced tomatoes–try using fire-roasted for more flavor
- Tomato sauce
- Cottage cheese–or ricotta cheese, or use half sour cream and half cottage cheese
- Egg
- Monterey Jack cheese–or pepper jack for heat
- Sharp cheddar cheese–or Colby-Jack
- Tortilla chips–or Fritos (I like Don Julio’s lightly seasoned tortilla chips)
Steps
Heat oven to 350° F.
Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Cook until beef is no longer pink. Stir in the enchilada mix, tomatoes and tomato sauce. Bring to a simmer. Simmer for 5-10 minutes.

In a bowl whisk together the cottage cheese and egg.
In a 9×13 inch pan layer the meat sauce, Monterey jack cheese, cottage cheese mixture, chips and finally the cheddar.


Bake for 30 minutes.
Serve and enjoy!


Notes/Tips
- Serve with avocado slices, sliced olives, shredded lettuce, pico de gallo or refried beans.
- This can be gluten free if your seasoning packet and tortilla chips are gluten-free.
- Love spice? Add diced jalapeños to the meat mixture, use pepper jack cheese instead of Monterey Jack, or stir in some hot sauce or diced green chiles
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. This recipe is best the first day because of the crunchy tortilla chip topping.

- 1 (1 oz) packet enchilada mix
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 1/2 cups cottage cheese or ricotta cheese
- 1 egg
- 1 cup shredded monterey jack cheese
- 1 cup shredded sharp cheddar cheese
- 3 cups lightly crushed tortilla chips or Fritos
