Crisis Casserole–time crisis, ingredient crisis? I got you covered. This recipe takes what you have and makes a meal out of it in minutes in the Instant Pot.

Crisis Casserole

Crisis casserole is a meal for those days that you don’t have time, energy or ingredients. With many combinations and possibilities you can make this meal your own with what you have on hand. The casserole is flexible—you can use many types of protein, from rotisserie chicken to ground beef to turkey or even vegetarian crumbles. The choice of noodles or rice provides variety, and the choice of vegetables will help you clean out your produce drawer. Tell me how you make your version!

Ingredients/Substitution Ideas

  • Chicken broth–or beef broth, water and Better than Bouillon
  • Old fashioned egg noodles (the heartier kind in the stand up bag)–or another short cut pasta or 1 cup uncooked white rice
  • Chopped cooked chicken–or turkey, tuna, cooked ground beef
  • Dry onion–or 1/2 cup sauteed onions or 1 tsp onion powder
  • Garlic powder–or garlic cloves
  • Black pepper
  • Cabbage–or chopped celery, bell pepper, carrots, corn or mushrooms or a combination
  • Cream of chicken and herbs condensed soup–or cream of mushroom, cream of celery or 4 ounces of cream cheese

Steps

Add broth into Instant Pot. Sprinkle in the noodles. Top with the chicken, onion, garlic powder, pepper, cabbage and soup. Don’t stir. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir well. Serve and enjoy! (you can optionally add cheese on top and let it melt–try cheddar, parmesan, etc.)

Notes/Tips

  • Serve with a green salad, steamed broccoli, asparagus, green beans, etc.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 2 cups chicken broth (or beef broth or water and Better than Bouillon)
  • 8 ounces old fashioned egg noodles (or 1 cup uncooked white rice)
  • 1–2 cups chopped cooked chicken (or tuna, cooked ground beef)
  • 1 Tbsp dry onion (or 1/2 cup sauteed onions or 1 tsp onion powder)
  • 1 tsp garlic powder (or 3 minced garlic cloves)
  • 1/2 tsp black pepper
  • 2 cups chopped cabbage (or 1/2 cup chopped celery, bell pepper, carrots, corn or mushrooms)
  • 1 (10.5 oz) can cream of chicken and herbs condensed soup (or cream of mushroom, cream of celery or 4 ounces of cream cheese)

Instructions

  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  3. Stir well. Serve and enjoy! (you can optionally add cheese on top and let it melt–try cheddar, parmesan, etc.)

Notes

Mix and match vegetables that you want to use. I used 2 cups cabbage and a half cup of corn.

If you use rice instead of noodles then only use 1 ½ cups of broth instead of 2 cups.

    This could get called– “Dial a Casserole”, just spin the dial for protein, veggies, seasoning, carbs, etc and use what you have.
    I love this method when I just cant think of anything and my last brain cell is done for the day in the creativity dept.

    A couple of suggestions– for dry onions/onion powder another option could Liptons French Onion soup mix. A spoonful of that might solve the onion AND the beefstock need.
    Additional protein options could include various canned beans, or quinoa. This Crisis Casserole could be vegetarian too!!

    An alternate for cream cheese, or cream that i like is ricotta cheese. It melts readily into anything . I keep a carton in my fridge most of the time.

    I didn’t have egg noodles so I used ramen noodles it was good but think the noodles was over cooked so next time I will cook it for 2 min.

      ramen do cook quickly! I would even go down to 1 minute
