Steelers Casserole

If you’re a fan of noodles and dumplings and carbs in general I think you’ll really love this dish. It’s a Polish-inspired recipe with all the good stuff…cabbage, butter, onions, polish dumplings, sausage and noodles. With only a handful of ingredients and just salt and pepper as seasonings it comes together quite quickly and is surprisingly flavorful.

This recipe is adapted from Pittsburgh Steelers Game Day Sampler on All Recipes. The author states, “A delicious combination of all your tailgating favorites: buttery haluski, mini pierogis and kielbasa all in one. A must-have sampler at any Pittsburgh Steelers game day party.” I’ve adapted it to the Instant Pot.

Ingredients/Substitution Ideas

  • Butter
  • Onion
  • Beef smoked sausage–or kielbasa
  • Chicken broth–or water and Better than Bouillon chicken base
  • Old fashioned wide egg noodles–I used Mrs. Miller’s brand in the stand up bag
  • Cabbage
  • Kosher salt and pepper
  • Mrs. T’s frozen pierogies–find these next to the frozen breads in the grocery store

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and sausage and saute for 3-4 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the noodles and cabbage. Add a big pinch of salt and pepper. 

Place a tall trivet* in the pot. Place a pan* on top of the trivet. Add in a tablespoon of water. Place the pierogis in the pan. If you don’t have a trivet and pan then you can cook the pierogies in a different way as stated on the package. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. 

Remove the pan and trivet and stir the pierogis into the pot. Serve and enjoy!

Notes/Tips

  • Serve with cucumber salad, mixed greens or roasted beets. If you love sauerkraut you can serve this alongside a side of sauerkraut.
  • If you use regular egg noodles* then you only need to pressure cook for 1 minute. Add pierogies into the dish on top of the cabbage (no pot-in-pot cooking method needed).
  • I used my 6 quart Instant Pot*. You can also make this in an quart pot.
  • I used this tall trivet* and one of these stackable pans* to cook the Pierogies with the pot-in-pot method.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1 medium yellow onion, sliced
  • 1 (12 oz) package beef smoked sausage or kielbasa, sliced
  • 2 cups chicken broth
  • 8 ounces old fashioned wide egg noodles (I used Mrs. Miller’s brand in the stand up bag)
  • 4 cups shredded cabbage
  • Kosher salt and pepper
  • 12 Mrs. T’s frozen pierogis

Notes

This recipe can easily be halved. Cut all ingredients in half but keep the cooking time the same.
