Description

An easy Instant Pot creamy chicken pasta with mushrooms, spinach and parmesan cheese. 


Ingredients

Scale
  • 2 cups chicken broth
  • 8 oz small shell pasta
  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite size pieces (or 3 cups chopped rotisserie chicken)
  • 1/4 tsp smoked paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp crushed rosemary
  • 1/2 tsp rubbed sage
  • 1 (4 oz) can sliced mushrooms, drained
  • 4 oz cream cheese
  • 1 tsp white wine vinegar
  • 1 cup frozen sweet corn
  • 1 cup chopped spinach
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Pour broth into Instant Pot. Sprinkle in the shell pasta. Lay chicken evenly on top of the pasta. Sprinkle the chicken with smoked paprika, salt, pepper, garlic powder, onion powder, thyme, rosemary and sage. Dump the mushrooms and cream cheese on top.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  3. Stir in the vinegar, corn, spinach and parmesan. 
  4. Serve and enjoy!
