Chicken Scarpariello–an easy one-pot slow cooker dinner loaded with tender chicken, smoky Italian sausage, garlic cloves, potatoes and tangy cherry peppers.

Slow Cooker Chicken Scarpariello

Chicken Scarpariello

The cherry peppers are the star of this recipe. They add a tangy flavor to the whole dish, and the pepper juice acts as the cooking liquid so no extra broth is needed. Don’t let the 20 garlic cloves scare you! They mellow out during the long cook time and melt right into the sauce. Outside of quickly browning the sausage, this is a dump and go meal with minimal cleanup. You really can’t beat that! Greg kept stealing bites of the Italian sausage.

Ingredients/Substitution Ideas

  • Olive oil
  • Italian sausage links–or turkey Italian sausage
  • Russet potatoes–or Yukon Gold potatoes
  • Boneless skinless chicken thighs
  • Garlic cloves–or 3 Tbsp minced garlic
  • Black pepper
  • Sweet cherry peppers and juice–or a jar of mild pepperoncini peppers
  • Cornstarch

Steps

Heat a pan over medium high heat. Add in the olive oil and swirl around. Add in the sausage links and brown for 3 minutes. Turn over and brown for 3 more minutes. They won’t be cooked through. Slice them into 1 inch slices. 

Add potatoes, chicken, sausage, garlic, pepper and entire jar of cherry peppers and juice into slow cooker.

Cover and cook on low for 3-4 hours, or until potatoes are tender. 

In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp of water, until smooth. Then pour the mixture into the slow cooker. Cover and cook for 10 more minutes to thicken up the sauce.

Serve and enjoy!

Crockpot Chicken Scarpariello

Notes/Tips

  • Serve with crusty bread, garlic bread or dinner rolls to soak up the flavorful sauce. A side of green beans goes well with this dinner also.
  • I used my 6 quart Ninja slow cooker.
  • If you like more heat, use hot cherry peppers instead of mild.
  • Chicken thighs work especially well because they stay tender during slow cooking.
  • This recipe is gluten free and dairy free.
  • I buy a big bag of peeled garlic cloves at Sam’s Club and store in the freezer. The garlic becomes very soft and mellows as it cooks and can be mashed into the sauce for even more flavor.   • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. This recipe can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.

Ingredients

  • 16 oz Italian sausage links
  • 24 oz Russet potatoes, peeled and cut into 1 inch cubes
  • 16 oz boneless skinless chicken thighs

  • 1/2 tsp black pepper
  • 1 (16 oz) jar sweet cherry peppers and juice (I used mild)
  • 2 Tbsp cornstarch
