Chicken Thigh Pot Roast–a one-pot, dump-and-go meal made with tender chicken thighs, vegetables and savory gravy that can be prepared in an Instant Pot or slow cooker for a hassle-free dinner.

Chicken Thigh Pot Roast

Chicken Thigh Pot Roast

This dinner has the vibes of a classic pot roast but uses chicken thighs, which stay incredibly tender and juicy in the Instant Pot or Crockpot. It’s a fast and easy, dump and go meal that feels like a homey meal without much effort at all. Greg and Skyler loved this dinner and ate it all. Enjoy!

Ingredients/Substitution Ideas

  • Water
  • Boneless skinless chicken thighs–or bone in chicken thighs with skin removed
  • Carrots–or baby carrots
  • Onion–or 2 Tbsp dried onion flakes
  • Yukon gold potatoes–or red potatoes
  • Garlic powder–or 1 Tbsp minced fresh garlic
  • Onion powder
  • Black pepper
  • Au Jus gravy mix–or brown gravy mix
  • Cornstarch–or flour

Steps

Pour water into Instant Pot. Add in the chicken, carrots, onion, potatoes, garlic powder, onion powder and black pepper. Sprinkle the Au Jus mix over the top of everything.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 12 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

In a small bowl stir together cornstarch with a quarter cup of cold water until smooth. Turn Instant Pot to sauté setting. Stir the slurry into the pot to thicken the gravy.

Serve and enjoy!

Notes/Tips

  • Serve with buttered dinner rolls and green beans.
  • Frozen chicken thighs work perfectly here. I always buy the big bag of frozen thighs from Costco.
  • Feel free to add other vegetables like celery, parsnips, or mushrooms to make this dish your own.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Cooking times can vary depending on your slow cooker, so check the chicken after 4 hours to prevent overcooking.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1 cup water
  • 1 1/2 pounds boneless skinless chicken thighs (frozen is okay)
  • 2 large carrots, peeled and cut into 1 inch pieces
  • 1/2 cup diced onion
  • 20 oz yukon gold potatoes, cut into quarters
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 (1 oz) packet Au Jus gravy mix
  • 3 Tbsp cornstarch

Instructions

Slow Cooker Instructions:

  1. Add water, chicken, carrots, onion, potatoes, garlic powder, onion powder, black pepper and Au Jus mix into the slow cooker. Stir.
  2. Cover slow cooker and cook on low for 4-6 hours.
  3. In a small bowl stir together cornstarch with a quarter cup of cold water until smooth. Stir the mixture into the slow cooker and cook on high without the lid until the gravy has thickened up.
  4. Serve and enjoy!

    Can I use a cup of beef broth in place of the water and Au Jus packet? I want to reduce the amount of sodium.

    Can au jus gravy from a can be used instead of gravy mix? If so, do I just remove the water from the recipe?

      yes I think that would work well and yes leave out the water.
