Description

An easy one-pot slow cooker dinner loaded with tender chicken, smoky Italian sausage, garlic cloves, potatoes and tangy cherry peppers.


Ingredients

Scale
  • 1 tsp olive oil
  • 16 oz Italian sausage links
  • 24 oz Russet potatoes, peeled and cut into 1 inch cubes
  • 16 oz boneless skinless chicken thighs
  • 20 peeled garlic cloves
  • 1/2 tsp black pepper
  • 1 (16 oz) jar sweet cherry peppers and juice (I used mild)
  • 2 Tbsp cornstarch

Instructions

  1. Heat a pan over medium high heat. Add in the olive oil and swirl around. Add in the sausage links and brown for 3 minutes. Turn over and brown for 3 more minutes. They won’t be cooked through. Slice them into 1 inch slices. 
  2. Add potatoes, chicken, sausage, garlic, pepper and entire jar of cherry peppers and juice into slow cooker.
  3. Cover and cook on low for 3-4 hours, or until potatoes are tender. 
  4. In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp of water, until smooth. Then pour the mixture into the slow cooker. Cover and cook for 10 more minutes to thicken up the sauce.
