Chicken Divan Casserole–a healthier, homemade chicken divan-esque casserole made in the Instant Pot.

Chicken Divan Casserole
This dish gives off chicken divan vibes. My version is a dump-and-go Instant Pot meal with a lighter, fresher feel (thanks to the yogurt and skipping canned soup). I also used brown rice for extra fiber and nutrition. It’s definitely not the heavy chicken divan from days past but it does add some of those same flavors. It’s a great way to enjoy those classic flavors in a simpler, more modern way.
Ingredients/Substitution Ideas
- Water
- Better than Bouillon chicken base–or chicken broth cubes
- Brown rice–or long grain white rice (adjust cook time to 5 minutes and cut chicken into bite size pieces)
- Boneless skinless chicken thighs–frozen works well
- Kosher salt
- Black pepper
- Garlic powder–or 1 Tbsp minced fresh garlic
- Onion powder–or dried minced onion
- Dried parsley–or fresh parsley
- Poultry seasoning
- Plain yogurt–or sour cream
- Mayonnaise
- Dijon mustard
- White wine vinegar–lemon juice
- Frozen broccoli florets
Steps
Pour water into Instant Pot. Stir in the bouillon. Sprinkle in the rice. Place chicken over the rice and sprinkle the chicken with salt, pepper, garlic powder, onion powder, parsley and poultry seasoning.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 22 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Break up the chicken. Stir in the yogurt, mayo, dijon and vinegar. Steam the broccoli and then stir it into the pot. Salt and pepper to taste.

Serve and enjoy!

Notes/Tips
- Serve with green salad.
- Try adding in sliced mushrooms or canned mushrooms.
- Sprinkle with parmesan cheese on top.
- If using white rice instead of brown, reduce the cook time to 5 minutes with a 10 minute natural release. Cut the chicken into bite size pieces so it cooks at the same rate as the rice.
- This recipe is gluten free.
- I used my 6 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days.
