Description
A healthier, homemade chicken divan-esque casserole made in the Instant Pot.
Ingredients

- 1 1/2 cups water
- 1 Tbsp Better than Bouillon chicken base
- 1 cup brown rice
- 1 1/2 pounds boneless skinless chicken thighs
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1/2 tsp poultry seasoning
- 1/2 cup plain yogurt or sour cream
- 1/4 cup mayo
- 1 1/2 tsp dijon mustard
- 1 tsp white wine vinegar
- 1 (12 oz) package frozen broccoli florets
Instructions
- Pour water into Instant Pot. Stir in the bouillon. Sprinkle in the rice. Place chicken over the rice and sprinkle the chicken with salt, pepper, garlic powder, onion powder, parsley and poultry seasoning.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 22 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Break up the chicken. Stir in the yogurt, mayo, dijon and vinegar. Steam the broccoli and then stir it into the pot. Salt and pepper to taste.
- If desired serve topped with shredded parmesan cheese.
