Blue Ridge Mountain Casserole
I am a fan of all the broccoli casseroles in this world. They just remind me of my childhood. This recipe is super quick and easy and can be made in your slow cooker or Instant Pot. It’s got a creamy sauce made with cream and sour cream and then a bit of cheese to finish it off for good measure 🙂
This recipe is adapted from dillard house broccoli casserole on Blue Ridge Country.
Ingredients/Substitution Ideas
- Butter–or 1 Tbsp olive oil
- Onion
- Heavy cream–or half and half
- Sour cream
- Black pepper
- Kosher salt
- Garlic powder
- Frozen broccoli
- Frozen cauliflower
- Cheddar cheese–or another type of cheese like parmesan, colby, pepperjack
Steps
Heat a pan over medium high heat. Add in the butter and let it melt. Add in the onion and saute for 5 minutes. Turn heat to low.

Stir in the cream, sour cream, pepper, salt and garlic powder. Transfer to the slow cooker.

Fold in the broccoli and cauliflower. Coat it in the sauce.

Cover slow cooker and cook on high for 1 hour.
Sprinkle cheese on top and serve.

Notes/Tips
- Serve as a side dish to any dinner like ham and potatoes.
- This recipe is gluten-free.
- I used my 6 quart ninja slow cooker. I like this slow cooker because it has a stovetop function on it which allows me to do the whole sauteeing step in the actual slow cooker instead of on the stove.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- You can also pop this in the oven for 30 minutes at 350 degrees.

- 1/2 cup cream
- 1/2 cup sour cream
- 1 tsp black pepper
- 1 1/2 tsp kosher salt
- 1 tsp garlic powder
- 1 (12 oz) bag frozen broccoli
- 1 (12 oz) bag frozen cauliflower
- 1/2 cup shredded cheddar cheese
Instructions
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the butter and let it melt. Add in the onion and saute for 5 minutes. Turn heat to low. Stir in the cream, sour cream, pepper, salt and garlic powder. Transfer to the slow cooker.
- Fold in the broccoli and cauliflower. Coat it in the sauce.
- Cover slow cooker and cook on high for 1 hour.
- Sprinkle cheese on top and serve.
Instant Pot Instructions:
- Turn Instant Pot to saute setting (“normal”). When display says HOT add in the butter and let it melt. Add in the onion and saute for 5 minutes. Turn saute setting heat to “less”. Stir in the cream, sour cream, pepper, salt and garlic powder.
- Fold in the broccoli and cauliflower. Coat it in the sauce.
- Cover Instant Pot and cook on “more” slow cooker setting for 1 hour.
- Sprinkle cheese on top and serve.

I bet you could do it in the oven. Just do the first part with the onions and sauce on the stove in a big pan. Coat the vegetables in sauce. Bake in oven at 350 for 30 minutes or so
