Cheesy Ranch Beef Potato Bake–an Instant Pot dinner with seasoned ground beef, tender potatoes, smoky bacon, ranch mix and melty cheddar for an easy one-pot meal.

Cheesy Ranch Beef Potato Bake

This hearty beef and potatoes meal is easy to make and delicious to eat. The ranch dressing mix, bacon and green chiles add lots of flavor. Ending with melty cheese is always a win in my book. Chances are, you’ve already got everything you need in your pantry and fridge to make this for dinner tonight!

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Dried onion flakes–or fresh chopped onion
  • Dry ranch dressing mix–I used Hidden Valley Brand
  • Beef broth–or chicken broth
  • Russet potatoes–or Yukon gold potatoes
  • Chili powder
  • Cumin
  • Diced green chiles
  • Bacon–or turkey bacon
  • Shredded cheddar cheese–or Monterey Jack or Colby Jack

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in 1 Tbsp of ranch dressing mix. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the potatoes, remaining 2 Tbsp of ranch dressing mix, chili powder, cumin and green chiles. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir in the bacon and cheddar. 

Serve and enjoy!

Notes/Tips

  • Serve with roasted green beans or broccoli.
  • This recipe can be gluten free if you use gluten free ranch dressing mix.
  • I like to cook bacon in the air fryer. You can leave out the bacon if you’d like.
  • For extra creaminess, stir in a little sour cream at the end.
  • For extra cheesiness double the amount of cheese.
  • I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • I like using these magnetic measuring spoons and cups* for cooking and baking.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This recipe can be frozen, but the potatoes may soften slightly upon reheating.

Ingredients

Scale
  • 16 oz lean ground beef
  • 2 Tbsp dried onion flakes (or 1/2 cup fresh chopped onion)
  • 3 Tbsp dry ranch dressing mix, divided
  • 1 cup beef or chicken broth
  • 28 oz russet potatoes, peeled and cut into 1 inch cubes
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 (4 oz) can diced green chiles
  • 4 slices of bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese

Instructions
